There are four 4.3 ROMS available for P75xx in the Development Section. Visit the Forum and have a look. They all come with instructions on installation which is not difficult as long as you have the basic knowledge. On stability, you will need to test them and decide which is stable enough for you.
Cheers.

I think you mean cook and not ****... Gives the wrong impression.
At op, there is a chef central in the forum which contains a lot of guides about how to go making /compiling /modifying roms.

You want to use or make?
If you want to use then please search in the development forums. There are at least 3-4 types of MIUI versions out there.
Installed my first custom rom "JELLYBLASTV3.0.3_Ported_For_S5830IOLD" on the ACE last night which is working. (not fully tested as yet) Is this the most recent and most stable rom to choose, or is there another one which is alot more popular.
Im not looking for a rom catered to my needs, just something recent, that isnt buggy and possibly matured
There are several active ROMs like Simplicity v5, SGS3 v4 and Ex-Trim

Almost all ROMS are stable, but there is no 'best' ROM.
Does stable mean "Won't crash on me frequently?" or "bug free"? Anyway, checking the ROM's thread usually answers both questions, most list bugs in the OP.

You have to do some work for that first
Look in Development Section, there are many ROMs, check their OP, you'll find what bugs they have.
Almost all custom ROMs except CM7 and CM9 are rock stable

Basically every 2.3.6 stock based Rom is fully bugless and stable. 2.3.7/CM7 Roms are stable with minor bugs.

I have s duos still it is not rooted and it is out of warranty so I was thinking to root and get 4.4 or 4.3.I have not done any customization on it. As 4.0.4 now about get outdate and offical update of 4.1 is not released I am bored of its ui is also boring so if you give any good ui that would be bonus. Please give the direct download links of rom, rooting app, bootloader, ui and what is necessary. I am at the starter level so try to explain detail as i know very less of all these and if possible do it as early as possible because I already wasted my 2-3 days in search about the rom I could not find any proper site. I would be grateteful to u if u will do just that work for me.

If you only need ui you can always install a "launcher" from Google Play.
If you want also to have the latest android and its functions then you will need a ROM.
The only rom found about your phone is HyperX
If you have rooted and installed cwm recovery then you will install the ROM.
Each rom has individual instructions. You can take a look at HyperX thread to see the procedure of how to install the rom.
I can't give you instructions through a post I'm sorry .Check out the HyperX Thread
