try "Wallpaper Changer" on Google play, it's free
It doesn't change a lockscreen wallpaper. Any idea guys?

So, using the regular email app or the sms app, there's a neat little bubble that shows up on the lock screen that you can swipe to go to the new message. It doesn't work for gmail though. Does anyone know if this is possible?

it never lock your gallery but it hide your selected pic or vid. then use go launcher ex to hide this app "gallery lock" you are save now

Or you can try Audio Manager (HideIt Pro), even easier to use.

You may also use those app lockers
In the gallery, when I tilt the phone, the thumbnails tilt with it making it very difficult to select the desired picture.
I managed to disable this in the app drawer when moving an app around but I can't find a way to disable it in the gallery.

the only way is to de-compile the app you want to exclude out of multitasking screen. After you de-compile, you should modify some stuff in .xml for all activities in the app. If you miss only one activity, then it will not exclude.
So, answering your question: search a bit more in google and you will find it instantly
