Is this functional in the fascinate cm7, and if so will any of them work with it.
This may seem a dumb question but i am new to cm roms and had a hell of a time just getting it to flash in the first place.

Yes it is functional and yes any cm7 theme will work with it. You can find some in the market as well as searching the forums for more

I've downloaded a few themes from the market and installed them but they do not show up in the theme chooser...wtf

Wrong. There are two launchers included in dark revenge. One is a modified vibrant touchwiz launcher and the other is a modified gingerbread launcher2.
