System/pre-installed apps are installed in /system/app
just pack any app back into .apk using bluetooth file transfer

Are there any trustworthy ones. The royal bank app accesses my financial information, that's not something I would want to be accessed by anyone else.

Did you tried: Settings > applications > development > allow mock telephony ?
Is there an app like smstracker that will also allow me to monitor messages through whatsapp and others
