Good, every device needs a stickied reference like this.
If I might make a suggestion...place the tutorials first so that people see that before anything else. Otherwise, this is a good way to centralize all the information.

So, due to the huge amount of threads with information for the X8 I found, I think getting the info you need is pretty confusing.
Not saying that this is THE guide for everything, but it should sum it all up nicely.
A Warning
First off, let me start by saying that if you don't think you need rooting, don't root.
It can be dangerous if done wrong, so be sure you know what you're doing.
With that out of the way, let's get going then.
Updates and Basebands
First, before you do anything else, you need to update your phone using PC Companion (download here: http://www.sonyericsson.com/cws/support/softwaredownloads/detailed/pccompanion/xperiax8?cc=us&lc=en). PC Companion will guide you right through all the steps for updating.
The latest version is 2.1.1.A.0.6, and the latest baseband is M76XX-TSNCJOLYM-53404015.
You can check your version by going to Settings -> About Phone.
If you are already running a custom ROM, you should update using PC Companion too, because some roms (like MiniCM) need the latest official version.
Advanced
If you need basebands for your X8, here's a helpful thread: http://forum.xda-developers.com/showthread.php?t=976538
Flash them with FlashTool.
Rooting
This is very simple to do, really.
First, download SuperOneClick (thread here: http://forum.xda-developers.com/showthread.php?t=803682) and place it on your desktop.
Next, on your phone, go to Settings -> Applications and enable Unknown Sources. Next, go to Settings -> Applications -> Development and enable USB debugging.
You also need the proper USB drivers. To check if you have them, start SuperOneClick.exe and click Driver Check. If the driver check fails, update your phone with PC Companion.
Now, connect your USB cable from your X8 to your computer. When connected it is VERY IMPORTANT to select CHARGE PHONE. Really, I can't stress this enough.
Start SuperOneClick.exe and just click ROOT. Everything should go normally. You might get a message asking you if your OS is 2.0 or higher, just go ahead and click Yes.
You should now be rooted!
xRecovery
YOU MUST BE ROOTED TO DO THIS
Installing xRecovery is the first step in the world of custom ROMs. Installing xRecovery also means if you are stuck in a bootloop, you can just recover to a working backup.
The first step is to download xRecovery mini-beta 0.1 (any other version WILL NOT work on your X8) (download HERE: http://www.megaupload.com/?d=8AJTKDTQ).
Next, download Root Explorer (download HERE: http://www.megaupload.com/?d=LGC110EX).
Copy both the xRecovery folder and the Root Explorer .apk to your SD card.
Install any file manager from the Android Market (I recommend OI File Manager or Astro) and use it to browse to the Root Explorer .apk file and install it.
Run Root Explorer, browse to the xRecovery folder and copy the 3 files inside onto the /system/bin folder.
xRecovery is installed. To start xRecovery you press the Back button while the Sony Ericsson logo is showing during boot. Restart your phone and just keep pressing the Back button.
To move around in xRecovery you use the volume buttons, to select an item you press the Home button (the middle one), and to go back you press the Back button. Go ahead and make a backup of your current system (make sure you have at least 300MB of free space on your SD card.
You'll find the backup you just made in the xRecovery/backup folder. Name it something you can identify (don't use spaces). Copy that backup onto somewhere safe on your PC.
Backups are REALLY important, don't be a lazy bum.
So, you bricked your phone.
Don't panic, don't worry, everything is going to be alright. If you have xRecovery installed, just recover the latest backup you made. That simple. If, however, you DON'T have xRecovery installed, we can still recover your dear phone, don't worry
Using PC Companion: Connect your phone to your PC and turn it on. Look around the update phone section of PC Companion for an option called "Repair your phone". Just follow the steps and your phone will be in working order pretty soon

Custom ROMs
Alright, when it comes to custom ROMs, it's mainly personal preference. I'll list some ROMs I've tried (and recommend)
For Beginners!
If you're flashing your first custom ROM, and you want a ROM that you can use daily, miniCM is probably your best option. I have tested and can vouch for both of these ROMs.
Floyo 2.2.1 miniCM 1.0.0RC2 by ponanovn (CyanogenMod 6): http://forum.xda-developers.com/showthread.php?t=964223
Really simple ROM, basically everything you need to get started in the custom ROM world. The fact that it has CyanogenMod 6 is kind of a disadvantage comparing to for example, Racht's or Jerpelea's ROMs (they use CyanogenMod 7).
It features dualtouch which means pinch zoom is working. To activate it, put one finger on the screen then another finger. Then spread your fingers. The SD Card safe to remove bug is finally fixed with the latest revision!
Not working: Compass isn't working, some Bluetooth headsets are bugged.

Very easy and very smooth, a perfect ROM for beginners! Battery life is better then average, because it isn't overclocked to an extreme level. Like Ponanovn's rom, it uses CM6.
Not working: Same as ponanovn's miniCM.

More advanced ROMs
These use CyanogenMod 7, and the reason why I say these are more advanced ROMs are that they need a little more configuration to get up and running then these miniCM roms.

Racht is an amazing cooker, and it really shines through in this ROM. This features GingerBread (Android 2.3.3). It's really nice, it just takes a little bit more configuration.
UPDATE 25/04: Racht updated his rom! No more SD-Card safe to remove crashes, which also means this is the most stable rom to date. Thanks Racht!

SuperOneClick is stuck at "Waiting for device"!
This is most likely caused by the lack of USB drivers for your X8. Go ahead and click Driver Check in SuperOneClick. If the window that pops up says "No issues found!" the problem is NOT your USB drivers. Otherwise, download PC Companion (which comes with the USB drivers for the X8) right here. Install PC Companion and give your PC a reboot.

this comes as an answer for many people who are looking for a RTL solution on their flyer.

This is an unofficial build of CyanogenMod 10 for the new Jelly Bean bootloader for the Transformer Prime.
As a start, the build dated Oct 13 2012 has the new bootloader and TWRP 2.3 for JB within the ROM so it can be installed on any device with a custom recovery, even if the device has the ICS bootloader or the TF300 bootloader... All future releases will not have the new bootloader or TWRP as part of the ROM.
For the most case, this ROM uses the official commits to the CyanogenMod 10 tree. The exceptions are the TF201 device specifics. Unlike the official CyanogenMod 10 builds, this ROM uses the new 3.1 Jelly Bean kernel and the new Jelly Bean drivers and proprietary files. I will stop this project once this becomes part of the official CM10. I will not release builds daily, rather ever 2-3 days.
Highlights of this ROM:
1) Android Jelly Bean 4.1.2 JZO54K
2) Built using the latest CM10 changes as of 30 Oct 2012 10:00AM Pacific Time (GitHub / Gerrit)
3) Uses the latest AndroidRoot TF201 device tree with the Jelly Bean 10.4.2.15 kernel (3.1) and proprietary files & drivers with some changes and additions by me (GitHub)
4) Needs the new Jelly Bean 10.4.2.15 bootloader [IMPORTANT: Flashing over an incorrect bootloader can permanently brick you device. The Oct 13 2012 build includes the bootloader upgrade and can be flashed over any ROM/bootloader]
5) HDMI audio/video streaming and bluetooth audio streaming (AVRCP 1.3 ready)
6) Camera and microphone
7) 4-way reboot menu (Reboot, Recovery, Fastboot & APX)
8) Includes all the files and changes need for the Google Widevine DRM [untested!!]
9) CIFS and NTFS (read-only) support
10) Fully functional dock and dock battery display
11) Removed CMUpdater
12) All other features of CyanogenMod 10 and Jelly Bean (full hardware acceleration, Project Butter, HD video, customisable notification toggles & many more)

New in Oct 30 2012 build:
1) Several device overlay updates and cleanups (bunch of updates for JB)
2) Auto-brightness turned off by default
3) Expanded desktop (hide/show Combined/Status Bar using the Power menu)
4) Cleaned-up & updated release tools script (this creates the zip packages)
5) Set correct permission for BtService.sh (Bluetooth DUN) script
6) Force NV_FPS_LIMIT to 60 for all performance modes
7) Device Advanced setting menu to set Asus performance modes (defaulted to Balanced). This is not for the CPU speed, rather the Tegra performance setting (cpuX.sh like functionality)
8) Fixed Torch
9) Updated device power profile based on official JB release
Highlights of the Google Apps Pack:
1) Uses the latest Android Jelly Bean 4.1.2 JZO54K Google Apps & Services from the Nexus 7 factory image
2) Includes the latest Play Store 3.9.16
3) Does not include any Google Apps available via the Play Store (GMail, Books, Google Now, etc. are not included)
Known issues:
1) Key layouts for certain regional keyboard may not work
2) Auto-brightness is funky [Use the app Lux for auto-brightness]
3) NTFS support is read-only
4) exFAT is not yet supported
Important:
1) Wipe data/factory reset if coming from another ROM (including the official CM10 nightlies)
2) Wipe cache/dalvik cache for every update
3) After flashing a build, it is a good idea to wait for 5-10 mins after bootup to allows everything to settle in
4) If you have not upgraded to the official Jelly Bean ROM yet, you will need to flash the Oct 13 2012 build or a stock JB ROM first to upgrade your bootloader, and then you may flash the latest build here.
5) Once you upgrade to this ROM, you will no longer be able to use the official CM10 nightlies till the new Jelly Bean changes are merged
6) Make sure you use a recovery compatible with the new Jelly Bean bootloader after flashing this ROM.
The usual 9 yards:
1) Have you read this post properly. Read it again!!
2) You need to have an unlocked bootloader
3) You need to have a custom recovery (CWM or TWRP)
4) It is a good idea to have enabled nvFlash (thanks to AndroidRoot) so that you can recover from almost any brick
5) Neither I, nor the CyanogenMod team, nor the AndroidRoot team take any responsibility if anythings goes wrong. Use at your own risk
6) Always make sure you create nandroid backups regularly

On Team EOS 3.0 Nightlies (current .31) microHDMI works... only without sound and 3D capability.
Thanks for this, was waiting for u to set up a thread before I gave it a go eos build has the dock close fixed... Maybe not made it into cm tree yet..

Is SDcard/MicroSD working in this one without any sort of bootup hacks that are found in the preview thread?

Not sure, don't have a micro HDMI connector or a HDMI display to test

Should work fine... but wipe cache/dalvik cache

Yes, as noted in the OP... and yes, no hacks required. But this uses the Android standard for mounts (/storage/sdcardX, /storage/usbdiskX), not the Asus standard.

Dock is fully functional as noted in the OP... also as noted in the OP, opening/closing screen on/off doesn't work yet.

The mute button on the dock doesn't work for me. Haven't yet noticed and other functions not working yet.

@mibo666, I will check it out... but if it has many changes, unless it is part of the merged CM tree, you won't see it in this
Flashing over preview edition with cache wipe just boots me into recovery. I recommend fully wiping if you're going to install this rom.
Update: Gotta fix brick with ABD

I didn't have any problems with doing a dirty flash through TWRP, but I agree that a clean flash would limit the variables that may cause problems.

After two hours of frustration, I finally fixed the brick and installed the rom. I was happy to see the new boot animation and try out my SD card. Hopefully I'll have the time to do more testing later.
I dont get it, why is there 4 diferent teams/persons making CM10? wouldnt it be better that Team EOS, AndroidRoot, Makelegs and you join forces and bring a better and more stable unique rom?
