You need root.
Many ways to do it, easiest for you probably is to instal Darky OTA app:

Is there a mod that can open an app when the menu button is held down? I know some launchers use this but I want to be able to use it everywhere, not just in the launcher. Thanks!

I'm not sure about the menu button but I think there's something called home2home or something that let's you change what holding the home key does. I'm not sure though so I could be wrong

you meant you want to open recent app list via a direct button? viable.
you should change a .pl file. I forgot its name. you can find it in /system directory( perhaps ).
and much more easily, use CM and you can do that with long pressing menu button. I'm using that function.
I have locked bootloader, i can't use CM :-\
