Does Wipe data/factory reset in CWM remove the custom rom and I'm back on Touchwiz 5.0?
And if this is right, that i go back to TouchWiz, why would I flash a stock firmware from SamMobile.
I just need to be sure before i do anything.

Wiping just deletes all user data and apps etc, not the actual Rom, what you need to do is find the firmware you originally had and flash that with Odin, if you want to also reset your flash counter then use the app triangle away before you flash, all info can be found in general/stickies

What would be the best way to go from any custom rom back to a stock rom. Wipe data, cache, dalvik cache in recovery, the shut down phone and flash stock rom via odin? Or should I also wipe system before flashing?

You don't need to do any wipes through CWM if you are going to be flashing a stock Odin rom, odin automatically takes care of all that stuff. You can just boot your phone into download mode as is and flash the odin rom.

I currently have a rooted firmware on my phone and would like to go back to official stock, the question being can i just flash it back using odin and official firmware? would i re-partition to get it back to when i first bought the phone? would i not have to clean the kernel script or anything because i dont want anything left on my phone

If yes, just flash a stock kernel

Also, the information on how to restore your phone to factory defaults is covered by the user manual and does not require xda-developers.
if you are on a stock rom, unrooted, just go through the settings menu and somewhere in location and security (i believe) you should find what you are looking for. make sure to also format the internal sd card.
For Android ICS
Settings> Backup and Reset > Factory Data reset
Settings> Storage> Erase USB storage
Settings> Storage> Erase SD card
Assuming you have CWM/Recovery installed, format cache, data, system, & internal sd card in Recovery, flash stock rom in Odin then reset flash counter. Done.
If you don't have CWM/Recovery & not rooted, do as Chef Tony said (definitely not an XDA thing if you're not the sort of person who tinkers with the phone/doesn't root or run non-stock firmware).

Sorry I was not clear. I have one of the nightly CM 4.0.4 builds so it will be the former option. Can I reset the flash counter in Odin, and will the Odin flash also remove CWM and reinstall the stock kernel?

Can you reset the flash counter in/with Odin ? Um, no
To reset the flash counter, you need Triangle Away if you're running ICS bootloaders, or a jig if you're running the old bootloader. Now that I think of it, if you're running ICS bootloaders, reset the flash counter with Triangle Away first, before you format everything in CWM & before you flash a stock rom as it requires root. Flashing the stock rom in Odin won't affect the flash counter.
Doing all those formats in CWM before you flash the stock rom will remove root (and everything else). When you flash a stock rom in Odin it will include a stock kernel.

Thanks. Didn't know about Triangle Away, great app. Wiped everything in CWM, and then tried to restore two separate 4.0.3 images found here. Both times Odin finished fine, but after reboot the phone doesn't progress past the animated "S". Any ideas?

Go to www.sammobile.com and download a stock firmware and flash through odin.

Usualy if you want to go from stock to CM9 you place CM9 rom and gapps on the internal sd card. Wipe cache and dalcik cache, data/factory reset, format system and then flash both zip files straight in a row without rebooting.
Go from CM9 to stock, reset the flash counter with Triangle Away and wipe and format as above. Go in downloadmode and flash stock rom with Odin.
If this is what you mean.
If you restore a nandroid backup you are still rooted and not have clean stock.
but if i restore a nandroid over a cm10 ( obv after a full wipe), will it works? oe i always need to reflash a stock rom?

Hi I recently just installed clockworkmod by chainfire and now i'm trying to flash a rom ( http://forum.xda-developers.com/showthread.php?t=1844343 ) but when ever i go to install a zip from sd card i can't find the the rom zip file... any help?

If you flash a 4.0.4 samsung stock, beware of the 4.0.4 emmc brickbug. Google or xda search will get u tons of info about it.

Ok. If you can access download mode just flash a stock rom with odin.

so you are stuck in bootloop? go to download mode and flash a stock ROM/firmware (you can find it in sammobile.com), just flash it with odin and you are good to go..
maybe your download was incomplete, i suggest you redownload the ROM again
