I would try Player Pro.
Not free but try to get it.
Visually the best player with alot of options.
You can change tracks with the volume buttons when in lockscreen.

There is a samsung galaxy s music widget that's free in the market. Also pure music widget works with the stock music player. I believe its about $1.00.

Is your phone rooted? If you are you can use titanium backup to freeze or uninstall processes or apps you don't want or need.
