A custom rom replaces your stock rom, the compatibility you need worry about is that its for you phone model.
Fyi....I'm not an expert!

Your current stock rom doesn't matter ( that's a lie, make a backup of it before you flash anything. And backup your efs folder) however, your i9300 is compatible with i9300 roms!

You can use other roms AOSP like
MIUI http://forum.xda-developers.com/showthread.php?t=1859716 (I'm using this one, it's beautifull and super smooth)
Vanilla RootBox: http://forum.xda-developers.com/showthread.php?t=1898798
Or Samsung based like

I use phenom 10.9 its a sammy based rom. Has been the best for my overall needs. Battery and customisation the main 2.

I'm using ReVolt JB. I'm I9300. Its pretty good and seems stable.

And will I flash it just from my phone's recovery mode,if not tell me how step by step please and thanks.
As per the first page of this thread, get a stock rom from Samfirmware & flash it with Odin (download mode); Guides. Or, if you search the General section (or do a Google search with XDA appended to your search terms; I do not have a link so don't ask) there is a thread in there somewhere with CWM flashable stock roms. But if you want to get the phone back to a similar state to when you bought it, do an Odin flash.
Nobody's going to regurgitate step by step instructions especially for you given it's been done thousands of times before in other threads. As a wise man on here says in his signature 'n00b OK, lazy n00b not OK'.

Yes, use Odin as instructed and you should do fine.
The spanish version and any other versions would definitely have English language.
The CSC Changer app requires root permissions to work. Just follow the instructions, that's all.

That thread is about the differences between releases.
We got battery threads all over the forums.
Take a couple of hours and read what other users experienced.
Battery drain is always settings related, If we'd had a magic app that would stop battery drain you'd know about it.

That's Kazakhstan unbranded ROM. How do I know that? I went to the same place you went.
Notice that if the ROM listed has got "( )" right next to it, what's inside is the ROM's carrier brand (E.G Vodafone).
You'll get future updates yes, via OTA or kies; it depends.

Dorimanx is an XDA dev who works on a i9100 kernel, named after himself. I absolutely love this kernel. It's stable, highly customisable and often updated. Search XDA for it and you shall find.
So you want stock, as evidenced below:

Fish finger (hahaha) all you want is to update to the latest Samsung official firmware right? If so, forget what kona said, you don't need a recovery at all. All you need to do is to flash a stock ROM via Odin, with your phone in download mode. Where to get the ROM? Search on Samfirmware.com for a stock ROM for your country, region & carrier. Then, to flash in Odin, you can click the link in my signature and find a handy link to a tutorial from there.
