I was wondering if it was possible to install stock ICS on the Galaxy S 3, while keeping new useful Samsung's functionalities (S-Beam, All Share Play, Smart Stay, Direct Call, Smart Alert, Tap to Top, Popup Play, S-Voice, …).
Actually, I would like to feel I'm on ICS on my GS3, and not on a Gingerbread-styled TouchWiz. I know I could install a third party launcher, but it customizes only the launcher, and not the status bar or the Settings for example.

CM-Zoom http://forum.xda-developers.com/showthread.php?t=1698273 is probably the closest ROM out there atm, its Samsung ROM with a bunch of Cyanogen stuff included.
I dont know of any AOSP-based ROMs that can run the Samsung app suite yet.

Most Samsung features depend on the TW framework. So few things will probably never work on AOSP based roms. However, for a lot of the features you named, there are alternatives. For instance, pop up play isn't a Samsung specific feature. But overall, what you're asking for will not work. Maybe in time, but I wouldn't get your hopes up...

It's written "The Theme is just for deodexed Rom's and is tested on Omega V3-V5!". Is the stock Samsung ROM deodexed ? Even if I am a developer, I dont know much about Android development
If it turns out to be deodexed, I could adapt his project to my needs (as said before, I don't know too much but it's a good way to learn !)

What bothers me in TouchWiz is replaced apps like Calendar and Contacts. This cannot be solved by theming. Is it possible to install these separately ?
I know I am a little picky and want the best of the two worlds, but isn't that the strength of Android ?

You can install any replacement app you want. Some of them might rely on a certain framework though (e.g. Cyanogenmod) and might not work. But any replacement app from the Play Store should be fine.

Of course, but what about stock ICS applications I am used to use ? Isn't it possible to "extract" them from original ICS ?
ICS (afaik) requires vendors to include the original framework and theming so that apps don't break on heavily modified phones.
The goo.im stock apps should work, but create a nandroid backup before attempting to flash it through CWM

Download the CM9 Rom and replace the desired apps in /system/app.
Make sure you remove the samsung counterpart, e.g. if you want the original calendar, remove SecCalendar (or something) and calendarprovider, add original calendar and calendarprovider.
Don't be stupid and only replace what you really want!

Although many ROM's have different features and add-on's, it seems like most have the same old theme... the ugly cyan blue writing on a black background in all of the menus and settings screens. Are there any ROM's that break from this same old theme?
Don't get me wrong, I'm not bashing anyone or any ROM, I just don't like the dismal blue on black look.
Can anyone suggest a ROM that has a different feel?

go through the dev. section and you will see. Another option is to install a theme (from dev. section as well, there are a few, or Play Store).
and that's why we have the themes section. that's also why there are hundreds of CM themes on the play store.

Yes, I find that every rom that comes out with 4.2 or 4.3 look the same. I don't see any difference so thats why it makes it hard to pick a rom because they look a like, but with different rom names. Is this really 4.3 or is it someones version how 4.3 would look like? I ask because of everyone's vision of how so called "key lime pie" supposed to look like and everyone was fooled into thinking this was the new name. Now, its out and its called "KitKat" and no one knows how its supposed to look like.

The "same theme" is stock Android theme, developed by Google, which exists in stock Android phones (Nexus), and also all clean Android forks, f.e. AOSP (CM) or AOKP.
Personally I love cobalt theme -> https://play.google.com/store/apps/details?id=com.dustinb.theme.cobalt and I have little plans to implement it to my ArchiDroid in near future. You know, theme isn't really a problem, because it's a matter of taste. You have a GIANT list of themes working on CM for example, you just need to take a look at themes section.
I agree with you , i also liked it at first because it was new you know have to change to make it look nicer
so all u have to do is just search for themes over the Internet or here in
the Galaxy S III Themes and Apps
PS: they have really good ones .
**don't forget too to download icon packs because it's the real complete for the theme .
But believe me it will be tough to decide which ROM according to the theme of the ROM .
Cobalt is a nice theme. I've been using the "Simplicity" themes which is nice too. I like the flexibility of altering your phone with these themes. I hope that when the 4.3 comes out for us that it'll be different enough to keep on our phones. I just hope that samsung changes TW a bit maybe even making it flat. I hope that more themes get developed so I can play around with them. I like "Lunar, Flatron, and Gem" those are pretty cool.
Is it possible to do Inverted Rendering (make everything negative) Dark menus, browser etc. with Stock 4.3? It used to be in Accessibility settings in ICS on my old phone. But I cant find it in ZU. Need to save my eyes :cyclops:

Too bad there is no theme either that makes the menus dark. I miss Real Dark Slim feature of my N7000. I wonder if there is any Theme builder to make Xperia ZU custom themes. I looked over google but could not find any latest from Sony.

Not from me. Porting stock samsung apps to aosp roms is not easy. Samsung customizes android with mountains and mountains and even more mountains of additions. For better or for worse is up for debate but I'd argue for worse :cyclops: The name "Lagwiz" doesn't come from nowhere :cyclops:
The samsung apps then reference these additions. Someone would need to find those additions, extract them, and stuff them in the samsung app apk. Basically, the samsung apps apk are not standalone installers. Someone would need to put the effort to add the missing extras to these apks. Now I haven't seen the magazine ux, but if you want a more 4.0 ics launcher without the ugly dock at the bottom try nova launcher or adw.
Samsung has discontinued this tablet after only 1 update from honeycomb to ics. Talk about poor 1st party support. Bulls**t that "there's too little ram" or "the hardware's not capable". KitKat runs smoothly and can actually use live wallpapers. I've never been able to use live wallpaper without severe lag even back in honeycomb.

I recently watched Nexus 5's Lolipop Developper preview and it look pretty freakin' sweet so i wondered if there is any way to flash them into our device ^^

As for Ginferbread(2.3) the API is not enough to have such an impressive themes. You can still get many Android 5 themes on CM 11 which are available on Play Store. But, make sure, due to lack of ldpi resources(As many devs already stopped adding ldpi resources to their app) the phone might lag more.
