I hope I asked the question right. I've got the home screen and two on either side for a total of five. I know more can be added because apparently I did it once unintentionally before reseting.

Press the menu button (or whatever it is, to the left middle button), click "edit page" then the pages come up, theres one with a + in it, click that and it adds a new page.
Or you can pinch like you're zooming out.

Hello forum. I have a two day old Vibrant that's behaving unusually.
I'm trying to change the two middle menu buttons. I goto applications, but when I click menu, I only get "view type" and not the option to change the middle buttons.
I also read about a fast reboot by holding the power button for 8 seconds. When I did this, it powered down and wouldn't come back up. I pulled the battery and it booted into safe mode. It had a little text flag on the bottom left that said "safe mode". I didn't even know the phone had a safe mode.
Anyhow, does anyone have any suggestions on customizing those two middle buttons?
I haven't rooted just yet. I think I may wait for Froyo.

click view type then click customizeable grid
then click menu, then edit, then long hold the app that you want to put in the number 2 spot and drag it there, long hold the app you want to use in number 3 spot and drag it there.
then click menu->save
(the next step is optional, but it bugs me not to have stuff in alphabetical order.)
click menu, then view type, then alphabetical grid
And you are done, really a round about pain in the ass way to go about changing the number 2 and number 3 spot but.....thats all we got

I've had my sgs2 since launch but the only thing that bugs me is the default screen. Is there any chance to have the home screen as screen 4 instead of screen 1? I remember seeing somewhere it can be done but the search is useless on my phone

If your using tw 4.5 you can go to edit and drag the page you want to set as your home screen to the top (not sure about earlier versions, as I have never really used it). Other launchers such as go, adw and launcher pro all have similar options.

You should be able to select the menu button and then select edit, you will then be able to rearrange the screens to your liking.
Thanks for the reply guys, I'm using tw. When I press the home button I want the screen it goes to tto be screen 4 (middle screen same as htc sense)
I understand you can mov, them around but that still. Makes screen 1 default :-(

The below information is for STOCK devices (or ROM's that are Stock and not using a custom launcher)
This is a Work In Progress, so if you have any tips that you found should have been in a manual, please feel free to post these and I will add them to the OP.
I just got my note yesterday and had to Google to find things that SHOULD have been covered in a manual or quick reference that wasn't.
Please keep in mind that this is my FIRST Samnsung phone (always been an HTC guy) so I am new to Samsung+Android+Touch Wiz and am guessing that I am not the only one.

Change Dock Icons:
1. From the home screen, open the App Drawer
2. Click Menu
3. Click View Type
4. Click Customizable Grid
5. Click Menu
6. Click Edit
Now you can drag and drop icons to the Dock Bar.
Follow steps 1-3 but in step 4 select Alphabetical Grid to return back to default.
Change Lock Screen Wallpaper:
1. Press the menu button then go to settings
2. Click Display
3. Click Screen Display
4. Under Lock Screen you will find an option for Wallpaper
Screen Capture Without the S Pen (Thanks kimtyson)
You can screen capture without the S Pen by placing your right hand perpendicular to the right side of the screen (in a karate chop position) and sweeping left. If you are left-handed, you can use your left hand in the same manner, sweeping left to right.

Long press the notification bar and drag left or right to change brightness.

Those are pretty standard among android phones...My addition for the note would be using your palm or side of hand to take a picture.

True to a point. Those that have had Samsung phones and know how to use and navigate Touch Wiz, probably. But I know several folks that jumped ship from HTC to Samsung and we're all new and learning.

This is normally presented to people when they set up their phones, but just in case someone skipped it, if you hold down the side button on the S-pen and double tap the screen, it opens up an s-memo over whatever app you're in so you can jot a quick note. There is also an option for this during phone calls.
EDIT: Here's a few other tricks that I haven't tested personally, but have heard from various sources:
1. If you are playing music and place your palm over the display, it quickly mutes the music.
2. While playing a video, tapping the power button will lock the display so it won't respond to touches. Pressing again will disable.
3. If you have motion activation enabled in your settings, when the phone rings you can flip it over to silence the ringtone.
4. Swiping a contact's name to the left in your contact list will quick-create a new message to them. Swiping to the right will call them.

Wish this worked without CheeseWhiz, odd it matters as the notification bar is framework, not launcher, but I couldn't make it work. Then again, I rarely managed to make the same function work in Cyanogen 7 either..
EDIT: Oops, yeah I'm an idiot, I had Automatic on, it works fine regardless of launcher.

You know that you don't have to swipe right-to-left, and that left-to-right works as well? Also going slower seems to help.
Couldn't see anything obvious (like a way to map the double-top-tap gesture) so I guess your only recourse is Play store and a 3rd party screen capture app.

Good to see you can still take screenshots the old way. Wasn't to keen on the swipe idea.
Sorry to be such a noob after all these years, but there is this tab thingy on the home screen with a few app shortcuts in it that just is in the way. I can figure out how get the shortcuts removed, and how to move the tab to different sides of the screen, but how do I just get rid of it? I don't know what its called or I would search for an answer, and I don't see any mention of it in the manual. I just want to nuke it. How?

This only removes the tab, if you aren't going to use multi-Window the pull down the notification and swipe left to scroll the toggles and disable multi-Window.
