Does anyone know if it possible to add some of the stock apps from galaxy tab 2 10.1.......to the galaxy tab 10.1? If so how and where do I find them?

It probably requires TouchWiz framework. So no.
You mean like floating layer apps?
Check out the floating calc .. floating memo.. and Stick it! Multi window video apps in the playstore for starters..

I have rooted my mobile thanks to chootu, but don't want the Samsung launcher but the default android launcher with 3 common buttons at the bottom.

if your rom is 4+ you can use a launcher like apex or nova.
