To unpack a boot image on windows you can use the dsixda kitchen for windows.

For Android or any Linux distro, kernel image and files are located in /boot partition. Using a root file browser you can navigate to the boot folder under root and see what's in there. You can flash different kernels but if you don't know much about kernels (like me) then stick to the flashable zips that the kernel devs provide.

Those kinda files can only be extracted via computer, cos its got 2 parts to it

Extract the files from winrar on computer, it will automatically extract both the files and join them.

It's possible. Decpmpile boot.img using dsixda kitchen there you'll see logo.rle inside rmdisk folder.
Use championswmimmer kitchen to edit that rle and convert it to png and edit according to your wish then re-convert it back and repack boot.img using kitchen.
That's normally how it's done.
