Yes, it's safe to remove the Sony email app. You can delete most of the stuff except for things that are crucial to Android. If you're not sure what's safe to remove, install Titanium Backup. It'll highlight stuff that's not safe to remove with a red color.
Don't come back crying if you remove something and your ZU starts to act funny.

OK, everyhting that's not a google app or service is safe to remove. Facebook, Google+, Picasa, Sony Walkman, Live Wallpapers, bla bla bla are safe to remove. Everything that's crucial to the system, like phone, bluetooth bla bla bla, is NOT safe to remove. Go ahead and remove the apps you feel comfortable to remove, like Facebook, Google+ and so on, and remove more and more when you learn new things.

Okey, since i'm not rooted yet and i wanted to check all the system apps in /system/app, i downloaded a stock .ftf firmware, thinking i would simply extract it and sniff around. Nope. I need a god damn tool to dump/extract the system.sin file, and since it's 02:30 (AM) here now, i won't dive into this bull**** right now, so i guess you'll have to wait for a sunny day when i actually feel like doing it

don't worry m8 its an easy, but annoying fix, all you gotta do is unroot, restart, delete the root apps, restart, turn off, take out battery, run seus, do the reinstall and you get all the stuff back to normal, after that you can root again, be careful, dont delete/uninstall any google apps, and it will be fine, if you look at the thread on BUG..........PLEASE READ it will explain how i came to this lol, it also give advice on fixing market if you end up with a stuck market (after the seus), there are also thread on what is safe to remove, use these for a rough guide, obviously there will be stuff that you will want to keep,

you will need to do a REINSTALL using the SONY ERICSSON UPDATE SERVICE (SEUS), you can go to c: program files (x86)/sony ericsson/update service/db/13740270 (or the number you got)/blob_fs AND DELETE ALL FILES
Then run seus to get a totally fresh download and update install, after its finished let it boot etc, install root apk and root again, but dont delete ANY google apps,
as i said do some reading from the above listed threads, if you were here it would take me 20 mins but trying to write it will take a while..................good luck, im always here (well mostly,gotta go out sometimes lol)
IM 1.6 is a google app also, and you need this for market to work (the little app icons give an idea to what provider they belong to)
GREEN DROID=ANDROID
RED/BLUE SPEECH BUBBLE=GOOGLE
and some have either GOOGLE/SONY ERICSSON/ANDROID in the title,

you the man homie all i did was this unroot, restart, delete the root apps, restart, turn off, and run the sony pc companion app to update it.. it said i had the latest version already but i chose to recover and so on i did as i was told nd voila a new fresh copy only most of the data like phonebook messages etc were gone but who cares its running smooth again.. il go nd customize to my own again.. i'l leave these google apps alone this time but stil be looking for a way to remove these stupid ads ;p thanks alot.. take care
all you need is the full version of titanium backup.. It had a freeze/defrost option.. its like uninstalling without actually uninstalling lol.. u can do all the trial n errors u want without having to reroot al d time!!

I would like to ask anyone who knows how I can properly use Titanium Backup I would really appreciate it. The problem i've had before is that when ever I backup I never seem to know how to properly back up my apps so I can also back up the data like my saved games on angry birds, and my tags on sound hound. If I back up and thn restore I always mess something up and my roms end up all screwed. please some one guide me!!!!
I usually only backup user apps. Press the options button on the bottom left of the vibrant. Then choose batch, then choose backup all user apps.

Like I said though, doing that only backs up the apps but it doesn't back up the data i.e. shazam tags, etc.

I always select Back up all APP + System data option and that should work
There is a thread on the proper use of Titanium and the best practices, its on my list to find and study today. When I find it I will post and edit.

im interested in this too.
the pain of setting everything up again is actually the only thing keeping me from flashing a new rom. (flashed my mytouch so much that i only kept a few apps)
and can the free version do everything the paid version can do?

thanks alot. I'll look at it now. I hate flashing ROMS sometimes because I don't get my app data. It sucks having to start Angry Birds from leverl 1 every time I flash something!
I use mybackup pro n backup apps. ..gives option to backup apk + data. Has worked well for me. Don't have re -download apps or anything.
I know this doesn't necessarily answer the question but it gives a way to backup apps+data(bookmarks,texts,call log, settings, etc)

Not sure why so many apps are consuming so much CPU power. Like face recognition, home, other google stuff. It's been over a day and still theses apps are processing or whatever they are doing

Simply use Titanium Backup to freeze apps. No need to delete anything.
I noticed huge lag as well while playing with the phone for the first 15mins and thought it would get used to the new OS, it didn't. One solution I found, and worked for many people was simply restarting the phone. Now my phone doesn't seem like the same laggy X10 I had. For Titanium Backup info and instructions, here is the developer's official wiki: http://matrixrewriter.com/wiki/tiki-index.php if that doesn't help use the search feature on XDA, or Google it...
Also when deleting Sony apps be careful things like Mediascape are used for putting contact pics in your phonebook, etc. It is also the default mediaplayer so don't delete it. Same with Timescape, if you use your phonebook contacts connected from facebook, I noticed some data is taken from Timescape.
Somethings that I can confirm are safe to delete:
1. Moxier Mail
2. Wise Pilot
3. Creatouch
Before doing this, backup everything with Titanium Backup, no harm in backing up
Well I've been running 2.1 since the day it was released and I've rooted but haven't uninstalled anything and everything is running smoothly for me. As it is for my two mates.
It runs a lot faster then the Galaxy S 2.1.
I haven't come across any lag yet.

Just wait for few minutes. New Dalvik VM is on its way so it is a bit slow to start . Give it ~10-15 mins.

I have done some research and testing, Found that mainly face recon, media apps, Google Sync, where draining power but leaving on phone overnight, charging it had finished processing all the pictures and synced data on my phone, of course you can remove apps but I wouldn't recommend any SE based ones as they all control certain parts to improve phone quality.

I was one of the first that got the oficiall 2.1 update and i stumbled upon something.
When i got it i just used google sync on almost everything. but then i realised i needed some apps that i had made a backup of by using MyBackup PRO. So i thought that "oh well, might just sync the contacts again".
Thats when all hell started to break loose on my poor phone, it was lagging like CRAZY, all the time. Didnt matter what i did, still the same issue...
So i formated and reinstalled everything on the phone, and everything was going extremly smooth. Like the first time experience all over again.
Then i realized "Damn, i havent restored my contacts" and then it hit me. All my problems started when i restored contacts using ANYTHING else BUT Google's own sync. Cuz once i was going to restore it using MyBackupPro it said something about not being able to restore cuz no Google account was found on contacts, but i already had logged in my entire phone with my google account, exxept syncing my contacts with Google.
So my guess is that they have incorporated the contacts too much with Timescape and Google Sync so if u use like Titanium Pro or MyBackup or watever backup program, it will give u issues with this update.
But its meerly a speculation from my side...
Other Point....
The other thing I did notice a lot of is the developer/Diagnostic tool this I imagine will be used to send logs and stats back to SE for 2.1 optimisations for newer firmware, Though it very random at times.

Remove "Home" and use a 3rd party launcher (LauncherPro, ADW Launcher)
You will be surprised how much quicker they are
what can be deleted
There is much better way to clean SE garbage applications than manual delete

Just do a search and use the key words "apps safe to remove" and you will find a google spreadsheet, generated form the SGS II, it will show you exactly what can and should not be removed.
In your search you will also find a few other apps that people have removed and listed.
Additional items
There are additional items that can be removed as well, depending on which leak / release you are using. In my instance I removed the following files, found here.. http://typewith.me/p/I717ICS

Yes they should be safe to remove. Make sure you use Titanium Backup or similar to back up the app first just in case you get a force close issue.
yes all those apps can be removed in the link I posted, I deleted them myself, on the rom I am using. Depending on what your running you may or may not have those files, but you will have some of them regardless.
Some understanding of what each file does though , look at the bottom... Example
If you delete [Exchange Services] and you need exchange with your email, that obviously wont work since you deleted it. Same with VPN, if you need to create Virtual Private Network connections with your phone, and you delete it, you can't create them.., etc.
I found another post from early this month, i forgot about making it completely. Slix71 and I both dislike bloat (I didn't realize that Slix also commented on my post from the 9th. Man was I sick that day

TiBU will allow you to freeze (make them unavailable to the Note) apps. I recommend freezing, seeing if everything you use still works, and then deleting if you need the space.

I've removed these 7. Keep backups of them in case you want to update your system. The official update from Huawei checked for and patched these system apps. If they weren't found the update would fail. Restoring the apps fixed that problem.

Titanium Backup would work. Or App Master. Or manually back them up using ES File Explorer. As long as you have a backup that's all that matters. You'll need these system app backups for when the next update comes out (unless that update wipes everything out).

Honestly, I don't see a reason to remove any of these apps... they are in the system folders so you won't gain any space or anything, just disable them and you won't see them and any updates will still work fine without doing anything special.
TBH, compared to many phones, this list is very minimal.
I guess I just want more control. That's one of the reasons I choose to root my devices. It's OK to stay completely the way the phone comes, regardless of how much or little bloatware is on the device. It is up to the user to choose. That is one of the many reasons Why Android is so popular.

Control of what? You don't get any control because the apps are in a separate partition that you can't use. In fact, you lose some control because when you delete the apps you can't get OTA.
Just freeze them so they can't run. There's no point deleting them. 7 seems trivial though. I froze more than 50 on mine. There's nothing from Huawei on my phone except the camera app.

I normally back them up so I can delete and save space. Should I need them later on it's simple to restore. But freezing them is a good method since it will let you know if it shall cause issues later on.

Comment above has pointed out that you don't gain space by deleting system apps. Or rather, you gain unusable space.
If you do prefer delete/restore, remember to back up the data (tweak TiBu to backup full data cuz it will ignore data if data is larger than the apk itself). I had problems with Dialer/Phone and System UI apps without original data. Navigation bar will be lost (it is there but it can't be touched/controlled) and incoming calls cause crash.

One, you do gain space, two, that space is usable. An average user wouldn't seem to know how to take advantage of this it seems. But to me, I make use of it everyday. - @acejavelin

I don't use TiBu. Never really cared for it. I use other methods more command-line based within the terminal emulator.
I had problems with Dialer/Phone and System UI apps without original data. Navigation bar will be lost (it is there but it can't be touched/controlled) and incoming calls cause crash.

This is why it's good to know what to delete and not delete. If familiar with your device then it becomes second nature, but when jumping ship and getting a new device it is typically best to freeze and see the results. Although freezing is no different than saving and deleting. Only thing that distinguishes these two methods is when you freeze the system app, it's still there (and yes, using space). Where as when you keep it safe, say, your sdcard, then it's as simple as placing back, and/or if the particular file causes the device to go bonkers then TWRP makes it possible to fix the problem as well.
