I love the themes and how the icons cover every single app but I prefer the functionality of launcher pro. Are there theme packs like this for lpp? If so where could I find them?

Yes the are both for LPP...google it and search the Market.
When I apply a theme, everything works but the dock and app icons? I am using holo launcher.. Any help would be appreciated. thanks

Are you applying a Theme Chooser theme? Or are you talking about a Holo Launcher specific theme?
