Why not to follow the procedure of how to flash any stock rom with odin. Just download the latest firmware from sammobile.com
follow any guide on how to flash stock rom via odin and you will be running official 4.1.2 xwl.x.x firmware .. to help and sort you out , here a few helpful links : http://www.ibtimes.co.uk/samsung-galaxys2-i9100-unroot-official-jellybean-firmware-460777 and , http://www.android.gs/root-galaxy-s2-i9100-stock-jelly-bean-4-1-2-xwlss/

Download official firmware samsung here ; http://www.sammobile.com/firmware/
With Kies you can only initialize your phone to factory state (it will be some older ICS version) and in next step upgrade it to newest version.
You can do this with Odin immediately by flashing required ICS version. Kies doesn't allow you to selective downgrade.

I have installed an official ROM via ODIN I9300XXELKC 4.1.2 (I am in South Africa)
1st, can i use the toolkit to root and install CWM
2nd, what ROMs will i be using? I see there is alot of tags etc, but not sure?

I am wondering how to get the 4.1.2 update manually to a stock galaxy s iii international version because it is not yet available in my country....
If you have not rooted your phone, I suggest you wait for the update to reach you. I am waiting for it and not jumping at the UK rom

Anyone knows the download link of Stock Android 2.3.6 Firmware for galaxy s2 sgh-i757m?
1) Lose the stupid font - we're not blind :-/
2) Samfirmware, AndroidFirmwares.net or Samsung-updates.com; if none of these places have the firmware you need, you're out of luck. Use an ICS or JB firmware.

Try to flash 4.1.2 first. Then update through OTA to 4.2.2
