Hello. Which Odin should I use for flashing various stuff into my Ace 2 i8160? Odin 1.85 or Odin 3.09?

I have installed the CleanROM and rooted using ODIN but now want to return it to how it was when I bought it. It is a UK P7510.
I am currently downloading P7510XXKL2. Do I just flash the PDA via ODIN and then it will be like it was in the first place after doing a factory reset? Do I need to specify a CSC file in ODIN?

I flashed it using ODIN and it went well. For some reason though Samsung Apps is now on the homescreen... Does this mean I have a different firmware (i.e older)??
there are guides to unroot your tab if you just search the forum
but you just flash the correct firmware with odin and then the stock recovery files
and to get the newest firmware for uk you can download an older firmware for uk p7510 tabs from samfirmware and then update using kies or OTA

For the UK KL2 is the newest...you're fine.
For US KMP is the newest

Im using odin 3.04 on my International Galaxy S3 when flashing Stock ROMs...
I read post(s) about the latest v3.07 is it also for International
Galaxy s3?

I've always used odin v3.04 and had no problems, just use that one.
Yes its safe to flash stock ROM's using odin on the international S3 as long as you are sure you have the right stock ROM, international S3 is I9300... make sure the ROM you are flashing is for this model.
Find one of the tutorials in the general section and follow it STEP BY STEP! do not miss a step and make sure you READ it ALL first!

If i flash latest Siyah 1.8.4 tar as PDA in Odin 1.85, am i rooted then?
perhaps ask in one of the Siyah threads?

yes, some (including me) do prefer Odin v1.85 over 3.04 or 3.07 and for some its different, just see the one that wrks for u (in ur case v3.04) and also ensure u have the latest samsung driver's and 'Kies process' killed while Doing ODIN flash on ur phone

Really? KIES process must be shut down? Why? There's any full information thread about odin?

The Kies processes mess up when Odin is running. You can install standalone Kies drivers and not have to worry about killing the processes. As for which is better, both do the exact same job but I prefer 1.85 as it is well tested, widely used and more guides on how to use; for reference on proper set up look at my guide in my sig (I know it is for rooting, but it tells you how to correctly configure Odin and Kies).

Get the stock rom you need from Samfirmware, flash it with Odin following the instructions in the thread stickied near the top of Q&A entitled '[GUIDE][ICS/JB] 11/03 - Flash Stock firmware'
Can i flash software via odin using windows8 64bit?
I have windows 8 pro 64bit, odin 3.07 will flash on it correctly or i need win 7 or xp?,
No idea, I don't have Win8; try it & find out. Every version of Odin I've tried has worked perfectly on Win7x64 though.
