I want to update my firmware but find information to be a bit haphazard so maybe someone might answer my questions based on my current information I will post.
I am Unlocked , S-Off with the following information if it is needed. Can someone tell me where to find the correct Firmware for this particular device to update to and is there a up to date method for doin this? The only source I found, there were no listings for cid 11111111.

You will have better success if you post in the AT&T HTC One (M8) forum. This forum is for the M7. If you are looking for firmware for your phone you will need to use the correct CID: CWS__001

If you have a AT&T PHONE your firmware is up to date. If your wanting to update to 4.4.4 you'll need to convert to the Developers Edition software
Change your CID to BS_US001 or BS_US002 and flash the 3.x DE Ruu

Try change you cid to HTC__001
Works for me. Just lock bootloader. It even worked for me with a twrp recovery installed. It just replaced it with stock.
I ran the ruu from pc

as you can see the device is s-on and i couln't find any nandroid backups for it and dont have any backups unfortunately
i should say i can install custom roms and dont have any problem to do so but thats just for testing and i love the stock htc rom
