Is there like an iOS emulator out there for Android? I need to run an iOS version of an app without changing to iOS.

Obviously you don't know what an emulator is.
I think I read that a group of people have managed to achieve it, but they haven't released it to the public for obvious reasons that Apple will sue them all the way back to the dark ages.

Is there any chance for an Android Wear custom ROM later? Or the HW is not enough strong for Android Wear?

Never say never, but I think no, becouse Android Wear is a Google operating system and Samsung Gear Fit doesn't have traditional operating system. It use RTOS (Real Time Operating System) and have very limited size of its own memory.
What we shall wait is Gear Fit SDK. It may give endless new ideas for new apps; stored mainly on your phone and viewed on your Gear Fit screens as notifications.
No, Gear Fit will never have Android Wear.

I spent a few days over my last vacation writing an app (really a watchface). I used Tizen Studio (which is Eclipse under a coat of customizations). Rayman96 says to use Android Studio but I'd be surprised if that works given that the GF2 runs Tizen, not Android.
You can write your app either as a native C++ apps or as a webapp. I opted for a webapp since (a) it has all the capabilities I needed and (b) my C/C++ skills are probably a bit rusty at this point. It all pretty much works like you'd expect. There's a certificate you need to install and Studio comes with (or, more precisely, will download for you) a tool to request it. After that you use the Devices tool it comes with to find your GF2 on the network and then just push it to the device, very easy.
One note though: as of a week or so ago there was no emulator and proper app templates for the GF2... what's there is all geared (hehe) towards round watches. So, what I wound up doing it writing my app and testing it in Firefox, got it working there and THEN sent it to the device and dealt with any (pretty minor) issues there. It's not the best workflow, but it works. As a webapp, it more or less works like you'd expect, though depending on what you're writing you'll need to use the Tizen APIs, which obviously you won't have on Firefox or Chrome, so you'll need to stub them out somehow or just develop on device only, which is a hassle (no debugging that I could see for one thing).
Also, word of advice: always uninstall your app before pushing an updated version. It's a hassle, but what I found is that if you don't you'll wind up hanging Tizen Studio and have to restart it, and often times the GF2 as well.

[Q] how can i manipulate my android phone into thinking it is getting shaken?

Are there any applications for android which would make the phone think it is shaking? Or an app which would manipulate other apps that require shaking (like alarm apps that need you to shake the phone to stop the alarm) into intercepting that the phone is shaking? If there are no apps for this is there a possible way to fool the phone to think it is shaking? Or how can i create an app that does this? i also want the app to work on background. for doing this there obviously is a need to manipulate the sensors that can understand when the phone is shaking. how can this be done?

Wear OS Version Numbers and their API Levels?

So, i try to write my first App for my Puma Smartwatch. (If i get it right, it's a derivative of a Fossil Gen4)
First thing, i try to understand Wear OS Versioning, what API level it supports, to select a corresponding emulator.
In the Watch settings i see

Wear OS 2.27 does not (yet) exist yet according to wikipedia.
Is it a sub-version of 2.2? The date and H MR1 points to it...
Anyways, the final question is, which API levels are supported by which WearOS versions?
They dropped Android 7.1.1 Nougat (API 25) support a couple of months ago. Wear OS app on the watch has been impossible to update since then, even by installing from ADB. Most of the other apps still update from GP, on the other hand.
