There are posts out there for the restoring various versions. Basically you need a ROM version. i.e. 3013stock.zip, 2311stock.zip, etc. Extract those contents to a TWRP backup folder and restore.
For example

The other trick will be TWRP version, it needs to match whatever bootloader you have. If you are getting partitions errors, count mount errors, or you can see no files you are likly using wrong TWRP so switch to a different version

Quick question... I've flashed this TWRP update.
Noobie question is how would I go back to the stock?
The freezing issue when the phone is off and plugging the charger in is a pain, I'm giving the phone away to my wife and she will be annoyed of this haha.

What variant do you have?
You can use a stock RUU fine to reset the entire phone or just open up the RUU fine and remove everything but the recovery partition.

How to install Custom Recovery:
1)Download Flashify from Google Play Store.
2)Open it.Grant Root Permission.
3)Click on Recovery Image.Then Choose a file.
4)Download Recovery from below links and then yup! and click on Reboot now.
5)Don`t Install Rom immediately select reboot system now.
