Can't someone build an AOSP ROM based on the CM11 kernel or is it more complicated than that?
I am currently on an AOSP based ROM with FOG6 firmware. I would like to go back to Touchwiz. Which Touchwiz based ROMs can I flash?
No matter if it is based on lollipop or marshmallow. Is there any of the two?

You have to make up your own mind, but the AOSP Builds from Vova Vafin are very good. Also try Aurora ROM which is CM based

MM version from Bule is stable enough for daily use, have try that for 3 days but downgrade to Miui, because i like my skinny Miui better

There are stock based custom ROMs (like A.I.X., found elsewhere) and LOS based custom ROMs. AIX -- based on V30 stock Pie, Android 9 -- has improved LG stock camera.
Your won't have and can't have stock camera on LOS-based custom ROMs.
You can always return to stock firmware. Sometimes you have to go back to Nougat first to erase/flush out all the effects, then update back to more current stock firmware.
I'm running rooted stock Oreo myself.
