I currently have an AT&T Galaxy S5 on the Vodafone network. I want to upgrade to the V10 and also use it on Vodafone. Does anyone know the differences between the 2 variants?

That one will not work since it's a n7000. Any i717 model will work so AT&T, Telus, Bell, Rogers will all work if you're willing to flash a custom radio (mine's a Bell).

I want to ask is it possible to change the at&t modem to a t-mobile modem so i can use 3g/4g on tmobile network if not just tell me im curious.
I saw this happen to the galaxy note and was wondering if it possible to do it on this phone.

What is the difference between the t-mobile variant and the international one accepted that the T Mobile version doesn't come with headphones?

Tmobile version update is provided through tmobile. But this is xda, I am sure can run international update at some point.
Tmobile version currently got unlocked bootloader.
If you wait a few more there should be some international varient unlocked to work with tmobile, but you wont see them being sold in store....ebay maybe amazon is best bet.

I want to get the international version of the S9 Plus but I'm not sure how compatible it is with the T-Mobile network. Will the international version of the S9 Plus work with the T-Mobile network? And also I want it to be able to root the phone because I know the Snapdragon version of the S9 Plus has a locked bootloader. Any advice?

all USA model Galaxy phones with snapdragon processors have locked bootloaders. The F variant is what you want and yes, they work just fine on t-mobile. at&t too.
