I just bought a my redmi note 3 sd and i requested a bootloader unlock so im waiting now and i wanted to prepare a new ROM to install. I see that there are lots of ROMs but i want a stable one with almost everything working. I saw 2 ROMs like that F-Rom and AOSP? AND I wanted to ask which recovery should i install TWRP Official or Cofface-TWRP?

For aosp and cm you need the normal recovery, cofface recovery is only for miui Roms. The Roms are based on the same leaked Rom From snapdragon. Aosp runs stable and fast, FP is working not AS fast then in miui but usable. Gapps are already included

I'm about to buy Redmi Note 3 Pro for my wife.
I'm Samsung user and I know alot about flashing Samsung but with Xiaomi I'm newbie.
I would like to put stock Android on it so CM13 seems the best to me.
Can someone provide me with links with instructions what to do to flash CM13 or maybe some other more stable rom. I need step by step instructions for starting from stock device with Miui, unlocking bootloader, flashing recovery, etc.

It's simple: unlock bootloader, install Alka twrp, backup your EFS, flash cm13, reboot.
But flashing cm13 may not be the best idea with new Kenzo device, as fingerprint scanner may not be working (Radio.zio may solve this problem).
Now all you have to do is read about those steps.

Is the FP only issue with CM13 or are there any other issues? Maybe recommendation for some other more stable rom. It is not for me so it must be stable like stock.

Mokee marshmallow and CyanogenMod 13 are stable, I like slim rom. I have come full circle back to global dev mm.
Fortunately we got a separate thread between Redmi Note 3 Snapdragon version and the other Redmi Note 3 Mediatek version in XDA, so there will be easier for you to choose what ROM u wanna install on ur device and just make sure that u are in right thread.
We got a plenty custom ROM based on MM as well as Nougat and we all know that Nougat is still in alpha or beta stage so you may come across with particular bugs that came from the device cos we got some different versions like fingerprint sensor, camera, led etc, but in MM we have almost rock stable build, choose wisely.
And another thing that u wanna note that actually we have two version ot Redmi Note 3 Snapdragon, they are Kenzo (which ppl mainly use this device) and another one with codename Kate (special edition). What we look here, that Kenzo has many dev support whereas Kate doesn't and you may end up with bootloop if u flash Kenzo's ROM over Kate, but sometimes it will work sometimes ot doesn't. Also if we compare side by side between Kate and Kenzo, we look that Kate is bit taller than Kenzo, thanks to additional 4G bands.
That's all I think and I hope you are satisfied with ur decision like I did.
