You should be asking this in the existing GSI thread in the news and guides section. This section is for posting development stuff and your post adds nothing in this regard.
Do not place non development threads in development sections.

I've got my mams old tablet that she uses for her banking app as the app has stopped working now as it doesn't support the android 5.1.
can i update the firmware with something that will change it to a more recent android release?

Updating ( means: patching existing Android OS ) doesn't help, but upgrading to an Android OS version what's required by the banking app at minimum.
Upgrading the tablet's Android OS requires
1. tablet's bootloader is unlockable
2. a Custom Recovery suitable to this tablet exists
3. a Custom ROM based on desired Android OS version suitable to the tablet exists
