I have a Redmi note 5 AI 6/64 gb variant. After purchasing my device i have unlockd the bootloader and flash global stable rom but i can't relock the bootloader. my previous rom was MIUI 9.5.21.0 China and my current rom is MIUI 9.5.17.0. If i relock the bootloader phone boot into recovery mode and shows "This MIUI version can't be installed on this device". If i unlocked the bootloader again then phone reboot into OS. As per my findings from MIUI 9.5.6.0 bootloader can't be locked after flashing global rom on Chinese device. Its a bug from xiaomi. So my question is
1. If i flash my device into 9.2.7.0 can i relock my bootloader again and can perform OTA update?
2. I have got an OTA update MIUI 9.6.3.0. If i update my device will it get bricked? If i can update my device via OTA update will it relock my bootloader automatically? Or do I have to flash it manually?

First this forum is not for your device. Correct forum is redmi note 5 pro (your device is named pro in India and xda forum is named pro too).
Second you can't flash global version on Chinese phone with locked bootloader. If you want global version you have to keep bootloader unlocked. You can apply OTA on global and it doesn't lock your bootloader.

vince doesn't have ARB (at least, not yet). I don't know whether it will ever get ARB, but that wouldn't bother me at all, since I have no intention of going back to miui for any reason.

Same here want to know how mi does this? previously on pixel 2 they will push OTA to beta user as well.
You CANT go from DEVELOPER/BETA to STABLE.
You need to wipe and flash thru TWRP or waiting for Fastboot Rom.

Well I tried 10.0.2.0 through the updater but it says it is different Android version, I guess 10.0.3.0 would give the same error. I even tried 10.1.1.0 but that gives an error as well which says this: "You're allow to flash the newest stable version published by MIUI forum from deveolp version only." Maybe when it appears on official Miui website for downloading it will work but if not, I am not sure how I will go back. Another thing that could work is waiting for newer stable which will be more up to date than the beta I am currently on and then trying to use updater with it.

It's pretty ****ed up.. yesterday I decided I won't wait so I applied for unlocking bootloader. This will take 360 hours and after that I can unlock it and flash whatever I can, I checked for anti roll back and there should be no problem going from 8.12.13 to 10.0.2.0 so if I don't find any solution, I will unlock the bootloader, flash stable and relock it.

GUYS I HAVE GOOD NEWS!! 10.1.1.0 just got released on Miui official website and we are allowed to use updater to flash it now! Just go to https://en.miui.com/getrom-346.html and download 10.1.1.0, then use the built-in updater to choose update package and you are good to go.

Exactly, I've got 8.12.20 global beta. Not a big issue with the beta maybe a bit less battery. About half an hour according to my usage in comparison with the stable. It's annoying though. You should be able to switch from stable to beta and vice versa at any given time.

EEA includes a few certificates required by the european regulations, otherwise, they are the same ROM with different version number.

Same, usually they realease first an EEA update and 2 days later the Global update with exactly the same changelog.

Can you investigate and elaborate a bit more. I have EEA an I cover all the LTE channels available around me (LTE 3/7/8/28) LTE+ checked on Band 3.
(Use Network info cell lite or Signal gurou if rooted.)

He's not rooted.
You dont need root for network cell info lite. Works just fine on my mi9t without root.

** Remember: don't lock bootloader if you change from china to Global/EEA/India/Russian or change any of them to china!!!

Nope...
After that you can lock/unlock bootloader without waiting.
For me at first time, i don't need wait for pass 168 hours! I think xiaomi cancel this proces and new mi devices unlock only with verify mi account.

Did you do clean install or just dirty flash
Installed and rooted via patched image a few hours ago and everything is working smoothly. The setting menu is much more streamlined and the fingerprint scanner works much better now! I haven't installed TWRP since I don't know which version works, maybe someone here can share which version works for them.

My device is still locked. So I just upgraded via the standard update mechanism.
I might do a factory reset, see if that makes a difference.

maybe that fix the problem, I think if you going on newer android version is always better do factory reset and start clean.

If i install this through twrp i guess i will loose magisk and root? Is it recommended to wipe data and system when coming from Miui 10?
After that i will have the standard recovery but the phone would be able to receive ota's again, am i correct?

As you are from Europe, if you bought official, it is why it is EEA, but it is also Global, sometimes updates comes more fast on EEA Global, then just on Global. It exist also Russian Global.

i am now on XEU miui 11 beta, if i want to install this EEA Stable i can just install this stable by twrp? sure i will do format data, as i do it always when installing new rom.
I try to apply this OTA update but when the phone reboots in recovery mode to apply it, the update fails at less than 1% (the phone directly reboots).
Any idea about this issue? (bootloader has been unlocked for root but I flashed by the stock recovery)

What rom are you on right now?
Well, anyway, chances are that your phone was previously on EU rom (for "sunny" devices).
I would try to MiFlash the FASTBOOT version of this rom.
It should totally work. (even if it's called "mojito" it's for "sunny")

you can get sunny roms from here
Bootloader = boot partition loader.
If you want to load the ROM, you have to load the boot.
If boot recording is not unlocked, it means you can't record there.
Sunny and Mojito have identical hardware, which means they can be loaded with the same ROM.

So, at the moment you have that rom on your phone ? V12.0.4.0 RKGEUXM
What do you want to do then? Just update your MIUI rom?
You should do it from your phone menu if it's that. (OTA update, but I think you're on the last version already)
Otherwise to flash custom rom and all you have to unlock your bootloader yes.
But as @StaryMuz suggest you should do a lot of reading first.
And get your official builds from here. (but don't try to flash other regions than EU with your locked bootloader!)

i wanted to update to mojito eu rom and after that global rom,but if i update it via ota it will just remain the same,or throw an error saying I need to redownload the rom package,i dont know if this helps anyithing.

the last version of your rom (the one you can flash with MiFlash in fastboot mode) is V12.0.4.0.RKGEUXM. So you already have the last version.
there is beta version, but only available to flash from recovery, so you need to unlock your bootloader.
again, be sure to read there and there.
If everything works fine and there is no particular reason for you to want to change version (is there??) then maybe you should just wait for the next available OTA update of your region (which will be soon).
