Don't know about customizations, but for stability use aosp with radon. For me it's even better than nougat with just 2gb if RAM.

if you want a stable rom ... then why do you want to go with a early alpha and beta release of android o? go with latest Lineage or RR of nougat.

Is it possible to have a stable ROM list under Android PIE and another on Android 10 if there is one?
you can go for any Pie aosp ROM that was updated till August/September.

I suggest you to install the latest aosp extendend which seems working properly but if you want to get back on nougat you should consider the latest nitrogen os of 15.08.2017.
