1) The clock you see is called Simiclock. It is free, Play around with the settings to get it to look like you want.
For transparency go to:
Settings > Background Color > Alpha 0%
To add the battery indicator on the right go to
Settings > Battery Settings> Click *Display Battery*
Note: The divider you see is attached to Simiclock! (Not the weather!)
The desired look of the divider between the weather is made by
resizing SimiClock over the weather widget! (Using LauncherPro)
2) The weather widget is a part of Beautiful Widgets
Hope this help

I saw a couple of screenshots with text used instead of the icons and/or folders. If its an app what is it? I have the minimalistic text.

Post up the screen shot you are referring to, I'm not sure what you are looking at.
If you are reffering to icons that say "phone" instead of a picture of a phone it's just a simple png file. ADW and LauncherPro(i think) allow for icon changes. Widget Locker also allows custom icons. The files are all over the net, look in the Android section of xda, they have a huge Icon thread.
Danny has a theme that uses text for the main screen instead if Icons, looks pretty nice, after unzipping the file you can use what you need if you don't want the entire thing.

I think this is what you're looking for: http://www.mediafire.com/?bi6xcug62hktann. I didn't make these, just found them using a google search.
As was mentioned, you need a launcher that allows you to change the icon image. For example, long press on a dock icon in launcher pro and select "change icon," then you can select any icon you've put on your sd card.
Hope that helps.
You can try the texticons app in the market. Seems to work with most roms and launchers.
If you still need some, I have about 160.
Edit, here they are. From XDA, can't recall who to credit.

I'm using launcher pro and I love it however I feel like my icons and date/time Widgets are to small. Is there a way to have bigger icons and Widgets?

You should be able to resize some if the widgets at least, tap and hold on them and a resize box should appear. For the icons maybe an app such as Bettercut would help, you can use custom icons with it, although you'll need to find a set that you're happy with.

Desktop visualizer will let you create widgets of many sizes (which themselves can be resized by Launcher Pro) with icons or images to launch any application.
the problem i see with widget resizing is that it only changes the amount of space it takes up on the screen without actually scaling up the size of the words. also i will look into bettercut and see what its about thanks.

If you use Desktop Visualizer to create widgets with images (not app icons), the images will fill the size of the DW widget.

Check out "animated weather widget "
In the market.
Other options are diferent Rom, or maybe a launcher like the one I use sometimes called "go launcher ex".
Total custumization of your dt, also can change the locker.
Do some research , there's tons of clock widgets.

here's the screen I was trying to get, seems to be a custom HTC thing but can't really use it for some reason.

it does work in dock mode, however I would like to use it as a widget on my home screen of my phone, It's probably not something you can do I did go with an app from the market though that gives me what I was basically looking for without those 2 extra features near the bottom it was called AK digital clock widget.
however I still think it would be awesome to get that as a place-able widget on the home screen.
Like the title said, is there a weather widget that shows the hourly conditions as well as 5-7 day forecasts?
Thanks!
you can download HD widgets from the market that provides a big clock with weather and another widget with 5 or 7 days forecast but it will cost you 1,99€..
I have weather widgets right now and am using the template that has the clock and weatehr for one day only because it only took up half the space on my homescreen, the one with clock and 5 day weather takes up a whole page.
I downloaded the beta of Recast, and i really liked it.
It's out on the market now, i think i will buy it too.
It can be found here
I added a screenshot to show you what it looked like on my phone, just to give you an idea.
There are many widget layouts to choose from as well as different styles and additional styles you can download through the app.

If anyone's still looking, I made one - because I was annoyed that none of the weather widgets had a sensible hourly weather forecast.
Search Google Play for "Hourly Weather Widget" (exact title), its a couple rows down the results.
bbc weather is good!
