I got a T-Mobile MDA Vario II, and I was wondering if it is possible to install/flash Windows Embedded CE 6.0 onto it, I downloaded the image from Microsoft Dreamspark.

No, I am afraid it is not possible-Windows Embedded CE 6 is used by Windows Phone 7, whereas Windows Embedded 5 is used by Windows Mobile.

first you need to find the installation file
then only you can do that
...or you have to dig the CHS registry.
There you can find, what exactly is the exe named, which dlls it needs, what are the file registrations for it and so on...
I did a bit, and it looks that it's so much work, that it just doesn't make sense...

I found that WMP10 is build in/come with CHS version
so ... is abit hard to find the whole installation files out

it would be like trying to put the firmware of a sony erisson phone on a nokia
windows CE is custom made for the device the rom is hardcoded with the settings of the device it was ment to run on
there are italian 2003 roms for himalaya devices if you do a search
think they are called ITA
or i'm sure other italian users can help you
think they are even working on a 2003SE translated rom or maybe a 2005

I just successfully upgraded my Kaiser to the HTC WM 6.1 WWE version. This required JumpSpl and HardSpl3.56 Could I use the exact same files to upgrade my Hermes? I am new to all this and do not understand if the software is ROM specific, or is it just like loading Windows XP on a HP or Dell computer?

No, check the Hermes WIKI if you want to update your knowledge quickly.
Each phone is different. Your Kaiser is like an Apple and your Hermes is like an IBM. Each os uses a different language base BUT, just like an Apple and an IBM, some apps are usable. The os language is different BUT when executing the cab files most will work across the HTC range as the os is Windows and reads things similarly. That doesn't mean you won't get a few surprise results or apps that don't work but mostly the apps work fine...
Now that I've garbled that up, the short answer is no, Kaiser roms for Kaiser, Hermes roms for Hermes. They can't be ported unless they are re-encoded...

As far as i know, Windows Mobile 6.0 and 6.5 is a derivate of Windows CE 5.0, and from Windows CE 6.0 shall come Windows Mobile 7, which means, Microsoft (or any other vendor) should make its own (mobile) platform based on the operating system Windows CE 6.0.
Mobile platform means in this case, that the kernel itself is the same, operating system features (GWES, device driver architecture (the common part)), some application like cabinstall, solitaire,..) are the same, but the rest of it can be enhanched or exchanged with extra features, like mobile capability (phone, sms), or specific drivers for displays, bluetooth, wlan, and so on...

I'd like to port WiMo 6.5 to the Meizu M8 which has Win CE 6.0, so I was wondering if we could easily port WiMo 6 to it? And event WiMo 7? as all the drivers for win CE work yet...
I don't think you can make Windows Mobile 6 (or 6.1 or 6.5) run on it since Windows Mobile 6.x uses a Windows CE 5.2.x kernel (someone please correct me if I'm wrong about this), but I'm not sure about Windows Mobile 7.
And do you know if porting WinCE 6 to WinCE 5.2 or WinCE 7 would be easy if we only have the drivers as binaries?
Or is there any way to run WiMO 6.x on WinCE 6?
