First of all welcome to XDA community.
It depends on your requirement/choice brother. DIfferent ROM gives different performance, battery backup, theme modification, update options etc.
There are various choices of ROM available.
If you want the taste of IceCreme Sandwich ( ICS ) we have various ROM available
Cyanogenmod 9 ( http://forum.xda-developers.com/showthread.php?t=1495776
MIUI v4.0 based on CM 9 ( Its still in Beta) http://forum.xda-developers.com/showthread.php?t=1517939
MiUiv4 - ALPHA1 - ROM based on 4.0. http://forum.xda-developers.com/showthread.php?t=1513136
IN Gingerbread we have
NightlyFourE V4.3.2 http://forum.xda-developers.com/showthread.php?t=1408952 ( you can download other NightlyFourE V4.3.1, its more stable)
and some other famous ROM which you can search in development thread.
You have to use and test yourself which ROM suits you better.
P. S. - I am currently using NightlyFourE V4.3.2, this ROM gives me best performance/ battery backup.

I think the best rom for lg p500 is stock gingerbread GRI40, but still if you want modified rom, then get Official CM7 get it here:

oh yes, get the latest nightly rom or stable, if available!
I will recommend you that you first flash kernel, and if you after that want more flash rom
I only flashed Francos Kernel #4, and if the battery will improve over stock I am going to wait for Lupohirp's ISC

Do all Custom ROMS for all the positive features they may bring always result in less stabililty than a Stock ROM?
I imagine CM7 to be the best....seeing as he works for Samsung also. I certainly found it the best when I had the I9000/Galaxy. However looking at the CyanogenMod forum there are plenty of people raising issues with the builds (including 'stable' builds).
I really enjoy trying different ROMS usually but I am deliberately sticking with a rooted stock at the moment - and it has never froze, crashed or rebooted itself yet! I do miss fiddling with my phone though!
Thoughts/opinions appreciated.

If you want a stable rom, then use the one in my sig. Oxygen is amongst the most stable roms that are out here. It's almost bugfree, because the creater of the rom, Adam G is a perfectionist.
You have no touchwhizz, just stock android that works. If you are looking for a shiny rom, then this one is not for you. If you want a stable rom and an almost bug free rom, then this one is for you.
ps you won't find this rom on xda, because he does not want that anymore.

CM7 works fine for me..The nightlies are more stable and bug free than the stable version(RC1).
Thanks guys. Will no doubt start flashing soon, but have downloaded current Stock so I can switch backwhen i want also

I don't know if you can say that. It has some coding from CM, drivers etc. But it is supposed to be a stock android rom, the way google intended it, with (almost) no CM stuff.

you can try oxygen rom. many users say it has a good battery life.
I already use Oxygen i found that it's not very good
oxygen rom with stock kernel is best battery life for me, then cm7 + roq kernel
Oxygen with franco.kernal #4 gives excellent battery life..

Hey guys am done with custom rom which are buggy i.e. cyanogenmod, oxygen etc I need a good camera, battery life am pissed off with bugs so big free too!! I thought stock would be better but I need a best combination with stock rom for battery life!! Plz suggest for the same!!!

Try to use franco kernel conservative or roq kernel with thachtungahn ts drivers

In my opinion, roq kernels are very good!
If you want more performances, try pp kernel

I guess u can try something like a modified stock version.
Ex: Resurrection, Optimus1 origins etc,,, which not only give you better battery life but also the feel of a custom ROM. I personally like the Optimus1 Origins 2.1 version as it is quite stable.
Sooner or later, everyone should realize that no rom is perfect as the definition of perfect varies for everyone. With that being said, a stock rom (or a slightly modded one) would be very suitable.

Hey guys thanks for the advice I'll try these roms but I would rather prefer default stock rom with some tweaks like changing kernel!!! I didn't like optimus origins cuz I get an error of some setting force close and apn problem in saving!!!!!

use openoptimus rom by bytecode.Best custom rom based on stock.
Best Rom for Battery Life?
The Talhos Rom GTR is the best so far, anyone think the same?

I have tested many kernels and stock based roms......
I think Dynamite 4.5G and ta-gb 1.2 is the best combination...
Also DjNoxd kernel works well....
Franco kernel gives gr8 battery life.....but has bugs like random boots and storage card not detecting wen exit frm mass storage mode.....(can use if u want battery and have wifi to exchange files)
RoQ kernel is gr8 performance but battery life is not that good....(gr8 for gaming)

That's why I use Optimus Origins 2.0 version (sorry as I said 2.1 earlier by mistake) The latest update has that force close bug but the 2.0 is pretty smooth. And regarding APN, you just need to send a message to your operator in order to get the apn settings and once you get it, you can back it up for future use.
I use Optimus Origins 2.0 with the ICS theme (created for Dynamite) and I can't ask for more
+1 for Dynamic rom 4.5G. The battery life so good.

Hey,I have been across the thread I thought it was some other kernel cuz the name was different and it has some bug so guys who are using that kernel how do u solve it other than suggested by developer!!!! Am gonna use that kernel with dynamite rom!!

If You are looking for a stock based ROM it's definitely the DonutHD. It's pretty fast and good looking. Also there aren't any problems.

I have tried it, it was good, i have tried alot, now i am on X10S. is that rom to old for todays? it's working good.

2.3 is newest version of donutHD.
I tested many ROMS but currently i suggest:

CM7 ZMOD with Doomkernel http://forum.xda-developers.com/showthread.php?t=1213843 ---- my personal favourite. very good batery life, stable and fastest of all wich i used
Achotjan SEMC Debrand CM9 http://forum.xda-developers.com/showthread.php?t=1965154 -- currently using, looks like its prety stable and performance is good

CM10 v.5.1 by scritch http://forum.xda-developers.com/showthread.php?t=2012483 -- cm10 rom with good performance but sometimes laggy
Conclusion
All mentioned roms are very good, all of them have som glitches or bugs. Just try them and choose wich is the best for you. For me is the best Zmod rom, its a bit old (android 2.3.5) but very fast and stable. Other ROMS are good too, but it depends on you which one do you like the most.
The AchotJan Semc is the best( cool features on a stock based Rom )but always after a month or two it becomes laggy and the Free RAM becomes low I'm now trying the light version of the same Rom by Tof37 give you more RAM by default and always more RAM means more speed
