I'm really struggling to find what kind of USB c charger I need to quick charge the mate 10.
I've got my Nexus 6p quick charger. 5v 3amp (max). Can these be used safely and effectively for quick charging?
The eBay listings are from other countries as the mate 10 isn't officially released here.

You can use pretty much any charger, but will need 5a output for Supercharge to work. Same as the charger supplied with the phone.

I'll have Look on Amazon. The chargers supplied just state generic "EU adaptor". The phones that sell are often just the phone, or phone plus vaguely described charger
The one that works with my one is the huawei supercharge model number 050450b00. Rated at 4.5v 5a. So Nexus one might not work but looking online these seem to be going really cheap.

I bought a Huawei Mate 10 pro and I love it! My previous phone was a Huawei P9 lite, so it's a huge upgrade...
But... I don't know anything about electricity or chargers/cables so I need your help!
I used my old huawei P9 lite as a GPS (Waze/Google Maps) in my car. I used a normal, cheap micro-usb to usb cable and a usb-car charger to charge my phone while using it as a GPS. But with the SuperCharge-option from the Huawei Mate 10 pro I'm lost... Can I buy a normal usb-c to usb cable and plug the phone in on my normal usb-car charger or do I also need some special SuperCharge-items? And what is the cheapest/best option to buy (on amazon.de)?

You can use a MicroUSB-to-USBC adaptor to charge it at a somewhat pedestrian rate (~4 hours for a full charge) - this is what I'm doing at my desk because I already have a 2.1A standard USB charger here. This should suffice for just keeping the battery afloat whilst driving, but if you need to be able to give the battery a good bum-kick in your car, you'll want a SuperCharge adaptor for the job.
I ordered one of these genuine Huawei SuperCharge car chargers through AliExpress - not particularly cheap at ~USD$30, but in my opinion a worthwhile investment to save getting stranded on a multi-day trip when you might not have access to mains power.
I got a genuine car Supercharger through ebay for about AUD48 and it works well. From memory it went from about 30% to 85% during a 30min drive to work. The charger didn't get anywhere near as warm as a generic car charger I used to use for charging my old S5 in the car.

Currently I have a Xiaomi Power Bank 2 with fast charging 3.0 but I guess that Huawei having their own fast charging technology this power bank isn't compatible with my P20 PRO.
Any ideas at what specs from the battery description I should take care in order to find one that it will charge the phone with fast charging?
The official Huawei AP09S is still the only one I am aware of that supports Supercharge (and it's supported for both input and output too). However it comes at a real price premium - £60 or so in the UK, which is nearly 5 times the cost of a Xiaomi Power Bank 2. Personally speaking that's just a little too expensive for me for a relatively small performance gain. I'm surprised that we haven't' seen 3rd party power banks with Supercharge support yet.

Your device came with a charger with 5Volt, 2Amp which is a normal 10Watt charger which comes with most of the smartphones.
So, you can use any 10W charger for charging your device.
Or, as there is no service centre near you, see if there is any phone repairing shop near you. I think you will find Asus charging adapter or a compatible adapter for your device.
You can also order a original one for your device from online stores. I've seen that charger for your device are available in many online stores.
