1) connect to 'KIES' and see if any updates r available to ur phone , if there then update it.
2) u can manually do so by dwnld'ng the official firmware pertained to ur region by visiting www.sammobile.com
3) dwnld the firmware from that site, and flash the same thro 'ODIN' from ur PC

flash a normal GT I9100 firmware via Odin.
Another option is to root your device and flash GT I9100 custom ROM via CWM recovery.

Download official firmware samsung here ; http://www.sammobile.com/firmware/
With Kies you can only initialize your phone to factory state (it will be some older ICS version) and in next step upgrade it to newest version.
You can do this with Odin immediately by flashing required ICS version. Kies doesn't allow you to selective downgrade.

Why not to follow the procedure of how to flash any stock rom with odin. Just download the latest firmware from sammobile.com
follow any guide on how to flash stock rom via odin and you will be running official 4.1.2 xwl.x.x firmware .. to help and sort you out , here a few helpful links : http://www.ibtimes.co.uk/samsung-galaxys2-i9100-unroot-official-jellybean-firmware-460777 and , http://www.android.gs/root-galaxy-s2-i9100-stock-jelly-bean-4-1-2-xwlss/
