I'm using this, and I have no real problems with it. I did have one event of lockscreen lag, but it's not happened since. Been running it for a few days.

I guess the most stable is a 4.1.2 as 4.2.2 is only a leak and 4.3 seems, by user opinions as far as I read, not that of a "clean" rom and has bugs. You can also always try custom roms as they try to minimize bugs and make roms more fluid.
to get firmwares try sammobile.com or here on XDA the rom threads

No custom kernel compatible with jelly bean rom as long as Samsung has not release sources

Ahh i see.. sorry mate i am a noob to android as iv always been firm iphone jailbreaker.. am i right in thinking then that in order to get a custom kernal such as siyah it must run with a rom based on a samsung rom... for instance siyah would be fine with a rom based around ics 4.0.4 and there for i wont get a custom kernal until samsung release jelly bean for the s3?
Siyah works on stock Samsung ICS and on AOSK/AOKP/CM based on ICS
It should be updated to support JB as soon as Samsung release the sources
Repeat after me....k...e...r...n...E...l....!!!

Stock 4.0.4 or 4.1.2?

How would I know what stock firmware should I get? I plan on installing Perseus and use my custom settings with STweaks so I need it to be stable as possible Also. I have no idea where my phone is originally from, Im on CM10 right now..
Id like a 4.0.4 or a 4.1.2 rom... thanks
Perseus doesn't work with ICS.
Why would you want an outdated version? 4.1.2 is official

Flashing roms in CWM is same in all phones...
If you looking for an AOSP roms, you can try SlimBeans... I use it and its really smooth and fast and low battry drain
If you Looking for Samsung base Roms, Try Wanam Lite or Android Revolution HD...
there is lots of note 3 ported roms but i found most of them laggy and unstable...

I have flashed lots of official roms, but i didn't see any important differences between different countries roms... Just some language features...
I'm persian but i flashed MK6 rom that is for Europe, I've got no problem... I can even type Persian...
For 4.3 rom, you've got just few choices and best of them is MK6... The other 4.3 updates have a lots of bugs but MK6 is almost bug free rom...

Last version for your phone is ICS to get to Jelly Bean you need to flash a custom rom (there is no official upgrade after ICS and in some countries 3.2 is last one). I can guide you to install a Custom ROM for jelly bean or maybe KITKAT, Let me know.
