I am trying to find an official ROM for my GT-I9100 phone ( Europe )
As far as I understood, the latest official ROM for this phone is 4.1.2 ( Src: http://samsung-updates.com/device/?id=GT-I9100 )
Is there a way to install an "official" 4.4 ROM for this phone with Odin ? I can only find *really* customized one, like cyanmogen, slim etc... which I don't want.
Which ROM would you recommend close to the official one?

You're right...
The last official ROM was 4.1.2
There are some ROM developed on the last builds (the official ones) like NeatRom http://forum.xda-developers.com/galaxy-s2/development-derivatives/rom-neatrom-lite-extralite-themed-aroma-t1569686, but are 4.1.2
Actually there are no official roms after 4.1.2
All others rom after that version are developed at least without Samsung's interface TouchWiz so the look is different (and are lacking all the specific Samsung's app)

This rom has touchwiz implemented with some galaxy s5 themes. Although it's still based on 4.1.2 it looks like 4.4.
In phone information it also says 4.4 but don't get fooled, it's still 4.1.2

Hmm that's a good question. I'm no developer though, but I thought a while about it.
It would be wrong to say it'an official rom for galaxy s2, cause official ended with 4.1.2 and everything beyond there is built by non Samsung people.
To be honest I have no clue why there is no 4.4 based rom with touchwiz and now where u ask I'm interested too. Maybe it'd be an idea to ask a developer personally about that.
Only thing I can think is it has something to do with the Samsung specific apps which source codes may not be published.
Earlier when I installed a custom rom on 4.3 I missed the radio and also the feature to play wma files on music player.
Suggestion I got was to go back to stock-based rom.
So I think the devs just have no source code for Samsung stuff and thus they can't put it into other roms.
But as long as they r just tweaking the original one (4.1.2) which already has everything into it, it's possible.

TouchWiz is the Samsung's proprietary interface developed for their products I don't think any source code is available to developer's community.
I've tried some rom without Touchwiz, but are always lacking something. I'm happy with my NeatRom based on the latest Firmware available by Samsung, rooted and working like a charm

I really want to get pure ics on my galaxy s II. Currently i'm on 2.3.4 gingerbread, unrooted.
I have asked a few questions about how to root my phone, and found a pretty straight forward tutorial, that users on xda have said is great to follow:

Rooting the phone appears to be pretty straight forward using the above tutorial, but finding the correct rom is what im not so sure about.
Users on xda have told me to use:

The only problem is, how do i know which one to use, i gather its going to be the 4.0.3 roms, but there are so many varients for different countries, which one is for me?
Does it matter which one i choose? Is there differences between them?
*I have previously posted this thread elsewhere, and members have told me to resubmit it here, as I may get more help. I couple of forumers have mentioned that I should use the xwlp4 ROM as it is the latest ICS ROM.

By pure ics do you mean ics without touchwiz etc or do you mean a stock Samsung rom?
The Frankenstein ones on intratechs thread are Samsung based.
If you want pure ics without any of the Samsung bloat cm9 is a great option and is already 4.04
If you want Samsung based then the latest is lp4 I think.

If this is the case forget all the ROMS in Intratechs section, even the Frankenstein ones as they are all samsung originals with all the samsung apps and touchwiz.
If you are looking for a root / pure ICS option CM9 is a good start with terrific dev support. I've been using it for a while now and it really is rock solid and keeps improving.

Not used that one myself but looks to be closer to the pure ics you are after.
I'd still give cm9 a try. There is a resurrection edition flashable through Odin.
Definitely preferable to the Samsung official ones!

SlimICS might work
You may want to search for Slim ICS... It's another light option.

I currently use this ROM. It has Apex Launcher so no Touchwiz, but it does have Samsung apps.
Although I'm no fan of TW or any of these apps, the ROM itself is great.
Go for HyDrOG3N-ICS with Siyah Kernel Best rom and kernel combo you're going to find out there for PURE ICS and lots of customization. It's stable, fast and really good battery life.
Is there an official (as in the one samsung puts on new phones) version of android 4.2 for sg3?

Maybe because it's more complicated to achieve than it seems?
4.2 will only be available or we can see roms based on 4.2 when Samsung decides to i.e. a leak rom from Samsung. Even 4.1.2 is a leaked one. Samsung has not officially released 4.1.2.

All the versions that I've found are custom, but I would like to try one that hasn't been messed around by Samsung. I really want to try out ICS with the original look.

Alternatively you could try Cyanogenmod 9 (ICS) or 10 (JB). They are based on pure android (AOSP) but have lost of tweaks and features and are generally much better then stock AOSP.

When I said "stock" I didn't meant a stock rom from samsung, I presume that there is a stock version of Android 4.0.4 (the one I was referring to) and then Samsung changed it with touchwiz.
I didn't (past) want customs since I presumed that there was an official stock version of Android without touchwiz for the GSII, apparently there isn't, so I ended up asking for a custom rom without knowing it was the only way of having what I want.
So to sum up:
I want ICS 4.0.4 (or 4.0.3, don't know the difference)
I don't want Touchwiz
That's it, sorry for the confusion
TheATHEiST isn't that rom Jelly Bean? My battery is already taking a beating with ICS, JB will probably last a lot less right? Although i'm already undervolting and underclocking

Here's an example:

CM9 is ICS. And the OP could flash an older version from other roms that are ICS.
Also he could download another launcher from the Play Store.

I keep hearing about the flapjax rom or something, cant find it. I dont think im spelling it right. Where is it? Is it very stable? Looking for the MOST stable rom with good language keyboard support for my mom. She doesnt need all the cool features, might even go with stock but if there's a stock jellybean that's really stable and has a good pack of keyboard languages id love to hear it.
If you want stable, go for an ICS ROM. The devs have done amazing work on the JB ROMs but unfortunately, there are some things that simply can't be done until official drivers and kernel sources are available from Samsung.

Yeah I think Ill do that. Its not like my mom will know the difference between ICS and jB. Rather have it work 100% than 90% for her.
Any recommendations for a really stable ICS almost like factory stock other than PA and avatar? I tried to download the 4.0.4 tmobile stock rom but the download link is dead and when I odin the file from samfirmware or whatever it will cause it to freeze on boot. Stock ICS would be fine with me.

Flappjaxxx is an awesome dev that used to be here on XDA. He is no longer here which we don't need to discuss why that is. If you use google you can most likely find his roms fairly easily. I suggest yuo stick with a stock ATT based rom is you want solid performance with out all the bells and whistles. You can find some things here in the dev section or on flapps site if you happen to find that

Like Stock as in TouchWiz or like Stock as in AOSP?
If you mean as in Samsung Galaxy Note stock TouchWiz, then you could try Novena.

touchwiz. AOSP is going to be more prone to bugs and issues than a rom that was made by samsung for the note
You can find flapps rom on goomanager,I haven't used anything but his since mash ,best roms and kernels

2) If I have to install custom ROMS anyway - which of them closer to clean Android 4.2 (without bloatware or modification). Which one to choose and where to get right instruction for newbies?

If you are talking about stock 4.2 check the development section, a few 4.2.2 roms out there as for instance SlimBean or Liquid, with other words you cannot get 4.2 direct from Google.
If you are talking about Samsung 4.2, there is only a leak at the moment in the general section's leak thread.

Stock means what the phone has as stock, i.e, out-of-the-box. Stock to the S3 is Samsung Touchwiz. AOSP would be Vanilla. It is stock on some phones, but not this one.
I think we need to make this distinction before we go on.
So what is it exactly that you want?
If it's as close to vanilla as you can get, Slimbean may be a good bet. It's unlikely you'll get anything without any changes.

hence I guess you mean AOSP, good that you confirmed.
the process of flashing is the same as with other roms and described e.g. in the SlimBean thread (only special thing is to flash the gapps package).
which one to choose is up to you, we don't know what you like . just try them and see for yourself. in my experience, Slim Bean & Liquid do not differ that much anyway.

If by "look" you mean aesthetically, it looks identical to Vanilla 4.2 (from google, eg what Nexus phones have)

Almost all AOSP roms are modified. You will not find one that has 0% modification. The ones listed on this thread are the ones with the least modifications

In what context? Aftermarket generally means modified. Something not stock. Not how it was when it was sold.

AOSP is google's android open source project. Android is open source. When they create a new Android version (4.2.2) that is vanilla (like Nexus), they release the source code so developers (Hobbiests at XDA) or OEM's (Like Samsung and HTC) can compile the source code into a ROM for a device.
AOSP ROMs released by XDA developers etc, are all close in look at feel to Google's android releases on the Nexus devices.
OEM ROMs usually heavily modify this code to make it unique to them, therefore becoems a selling point for their brand
Now it's clearer. But which AOSP ROM to choose? Do they have rating? Which is more stable, bugfree and relaible? Do they have OTA update without necessity to wipe data (like Samsung stock one)?
For close to vanilla, try the recommendations given in this thread. We can't tell you which is "best" as its against forum rules. Everyone is different.
Some have OTA. Most don't. If you're going from rom x version 1 to rom x version 2, you shouldn't need to wipe.
If you're going from rom x to rom y, you will need to wipe

Which ones have OTA? If the ROM does not have OTA, how to update the firmware? Via ODIN, but without wiping data after update?
None of the simple ones have OTA.
OTA is predominantly a stock thing.
With custom roms (vanilla or stock) you download the rom, put it on sd card and flash via recovery.
