Not content with installing apps one by one, I decided to see if Titanium Backup would work..and alas! It does!
Pre-Reqs:
1. Rooted NookColor: http://nookdevs.com/NookColor_Rooting
2. BusyBox: http://nookdevs.com/NookColor_Installing_Busybox
3. SU/Superuser.apk: http://nookdevs.com/NookColor_Installing_su_and_the_Superuser_app
Titanium Backup installed on the phone: http://www.appbrain.com/app/titanium-backup-★-root/com.keramidas.TitaniumBackup (I recommend the paid version!)
Steps:
Open up Titanium Backup on your rooted Android phone, and backup the apps you'd like to transfer
Use Astro to backup Titanium Backup(Oddly wasn't able to do this through Titanium Backup itself?)
Use adb/astro to install Titanium Backup on the Nook, after BusyBox and SU have been installed
Transfer the 'TitaniumBackup' directory on your phones SD card to your nooks
Run Titanium Backup on your Nook, and go to batch restore, and then restore missing apps. I chose to restore the apps only, and not data.
Let it do it's thing, and you should be set Just did this with about 50 apps, and it seems to have worked.
you know, i was planning on trying this but never got to it. i'm glad you've already found out it can be done.

i wish, ive got busybox in the xbin folder but i get permission denied when installing
I was trying to use Titanium to back up whatever I have in my NC but no go.... it would always stay at 0%. Any ideas? I'm rooted and SU-ed.
I cannot get pass step 7. It said "bad mode"
A better way to install Busybox. Just install it from Titanium backup.
if you get the "bad mode" error, just use root explorer and copy busybox to the /system folder anthen install using the code in instruction # 11. then your good to go. thats how i got around it.
also i used a terminal emulator on the NC itself

just click "problems?" and titanium will install busybox in the correct location for you.

the "bad mode" was due to the chmod wrong format, it is now corrected on the site.

Titanium Backup is also an awesome way to get apps on to the NC that has problems installing otherwise:
1) Make a backup of the app you want on another device that has it successfully installed (in my case, my Vibrant).
2) Find the three files in your Titanium Backup folder on the SD card of the device. It'll have a date stamp with when you made you back up.
3) Copy and paste into the TB file on the NC's SD card.
4) Start TB on the NC and you should see that there's an uninstalled app at the bottom (the one you just "exported" from your other device).
5) Click on it and choose install (or is it "restore"?)
This is probably a repost and some of you already know it, but its just something else you can use TB for.
I have root access now by using Gingerbreak installed on my optimus sd card so now I need to find the correct procedure to removing them from my command prompt on my computer. What are the steps and then what are the commands to remove apps from my Optimus V ?

I have found a more automatic way of removing the bloatware. I downloaded root explorer and moved the app files from within the system->app to my sdcard. That way if I ever want to I can move them back.
The guy above me is correct as well but E.S file explorer is a free app with no ads and does everything as root explorer and looks better while doing it.
Click menu enable root settings/mount then long click the app you want to delete
I prefer not to delete but simply "move" to sdcard so that I can bring it back if need be.

Before you move anything make sure they're safe to remove, as in won't affect other apps. Having a backup won't hurt too. Many apps can uninstall system apps, among them Titanium Backup, Gemini App Manager, Link2SD or file managers with root access such as Root Explorer($), Ghost Commander, ES File Explorer and File Expert.
A safer way is to freeze the bloatware using Titanium Backup Pro($) or Gemini App Manager rather than deleting. You aren't likely to be using the space in system memory anyway.
I like using the Harmonia ROM, but I have an S Screen, so I also use the Xionia Anykernel 14 with a button switcher, so it functions GREAT so far, and none of those crappy preloaded bloatware apps, but if I ever need to get back to the original OS, I can nandroid restore my backups of my old system.
I was reading up info on if its possible to backup your data before rooting, since I know rooting will erase it, and I ran into this:

I had no idea you could temp-root, and to be honest, at the moment, I just want to have root to perform a backup and remove some stock apps, not install a custom ROM or anything, but I have a few questions about this.
1. Whats with the section on clearing the temp root? Does it leave files on there even after the root is gone?
2. This temp root seems to be similar in theory to a theatered iphone jailbreak, but once I reboot my phone, does the root just go away and everything is back to normal, or do I have to use the SDK to boot my phone at all from then on? I am asking because of the clear temp root section.
3. Would a temp root cause any problems with future updates, or is there no way to know that?
4. Could I install an app that requires root access to work while temp rooted? I want to install Airblocker, but it needs root access. Do you only need root to install it, or would it stop working once I reboot and the root is gone?
5. The main reason I want to do this is to remove most of the stock apps Sprint installed that you cannot normally uninstall, will they just appear as uninstallable once rooted or do I have to use an app to remove them? And if so, what?
6. Do does this Titanium Backup basically create a copy of your entire current ROM so you can re-flash it and get your phone to exactly the state it was in when the backup was made, or does it only backup files and settings so you still need a working ROM and mostly the same apps installed in order to do a recovery? If one does flash a custom ROM, how can they recover their apps and all their settings (.... and videogame progress) to a different ROM?

1. All this does is return the original stock rom back to normal, just like it was freshly updated and turned on.
2. This being temp root, yes you will always have need of a computer after every reboot.
3. All rooting does is give access to folders previously locked. That being said, having access should not mess up an update, just do not CHANGE anything in those now accessible folders.
4. Most apps check for root access as soon as it runs, so yes, when rebooting you will have problems with root access.
5. You will have to use another app, titanium backup should do it, so should ROM toolbox.
6. Titanium takes the backup of the APK file and the data for that file. So, when reinstalling, it installs the apk first, then restores the data exactly as it was when it was backed up. It only backs ups apps, not the entire rom. You will need a recovery image to do this.
I recommend fully rooting your phone and switching to a re-analyzed stock rom, like mean rom or something, thats what I run. It has most of the stock apps removed and is fast as ****. When you make your backups before you root, just keep them there and restore them once you have a different rom.

I don't believe it's possible. Titanium Backup requires root access in order to place the data/app back in it's protected folder.
You definitely need root to restore data and do anything with system apps. I wonder though, is there any way we can extract just the apk from the backups?

I've recently rooted my sk17i and removed some stock apps using Terminal Emulator and it worked perfect for me.
But I still have two apps that I want to remove but I am not able to find thier .apk name:
1. Games by PopCap
2. Games & apps
Any one know which .apk s to remove ??

Install an app that gives you ability to view system files and folder (Root Explorer or ES File Explorer), navigate to system/app folder using one of the aftermentioned apps, and there will you find apps you want to delete.
Edit: I don't know their correct names, but you will be able to reckognize them by icon.
Use Titanium Backup and you will find it quite fast.

I tried that before but didn't work
now I installed Root Uninstaller and could remove those apps
How come?, as I used those two app for the same reason as you - deleting unwanted apps, and there were no problem.

I tried root Uninstaller and it's great. is there advanteges of Titanium over root unistaller?
try nobloat free its on market, and its show you the exact name of the app

Titanium Backup shows ALL apps(system and user) installed on your phone by their name, allows you to backup and restore them with userdata and lots of other stuff. Check it out, it is actually a must-have root app.
