I am thinking of getting a 64gb micro sd card (which I believe will work in the GS2), how easy is it to transfer the apps and content that are already on my 32gb card? I is it as easy as just copying the content from the current card to my pc then copy it back to the new 64gb card?

Also, yes. It should be as easy as copying the content from one card to another.
Goes on sale tomorrow on Amazon UK for £99.
The SanDisk 64GB microSDXC does work in the SGS2 -- I've been using it for about a month now. If you're transferring stuff from an old memory card, I'd recommend the following procedure.
Remove the old card from your SGS2 and put in the new 64GB card.
Power up the SGS2; it'll say something like "external SD card is damaged. Do you want to reformat?" Say yes, and let the SGS2 reformat the card from exFAT to FAT32.
Remove the 64GB card from the SGS2.
Mount both the old & new memory cards on a PC, and do the copy there. Use your PC's SD card slot or a USB reader.
Once everything's copied to the 64GB card, put it in your SGS2 and you're done.
Isnt only up to 48gb sd card supported on our S2?
A couple of people have tried the SanDisk microSDXC 64GB , and it appears to work fine , after a format in the phone , 48gb is just the official max.
See thread in link below.

I have been looking around and I can't find what SD Cards are compatible with the Atrix.
I have seen something about a SDHC Card, but I not sure if it is compatible with the device.
Any help would be appreciated.
You can use any MicroSD / MicroSDHC memory card. NOT SD / SDHC card.
SD / SDHC are larger and physicaly don't fit.
Thank you for the answer. I did mean MicroSD. I just never heard of MicroSDHC.
Has anyone tried switching the internal and external sd cards in the fstab? If so, could I see your void.fstab?
I want to fully use the 64GB microSD card I just ordered. It hasn't arrived yet, so I can't test it myself right now...
help, my micro SD won't click/latch into place. what do I do?
Change the SIM & micro sd card holder.
I had been using my tab S6 with a kiwibird USB C SD card reader and this worked great.
I ordered a Samsung 128gb U3 micro SD card but my issue is that while the SD card is in the tablet, the USB card reader does not get recognised. This is also the same with my Note 9.
This seems very odd. Should this be the case, or is there a workaround?
problem solved (hopefully)

I contacted Samsung support and was advised to clear the data and cache from USB settings. After doing this the SD card reader now works while the micro SD card is inserted.
Problem not solved..
Ok, so I thought the problem was solved but it seems not.
Whilst my Transcend 64gb sdxc SD card was recognised in the card reader while the micro SD was in the tablet, the Toshiba 64gb sdxc SD card was not. When I removed the micro SD card from the tablet and rebooted the tablet, the Toshiba card was recognised in the card reader.
I've no idea why this would be the case but it basically means that I can't keep the micro SD card in the tablet which is a shame.
