Now i want to install a custom rom but i don´t know what recovery image to use.
Software information:

I always recommend AmonRA (latest is 1.7.0.1 IIRC).
As for ROMs, you have 2 main choices (well, maybe 3)
Sense 2.1 ROMs (like official)
Vanilla 2.1 ROMs
Vanilla 2.2 (Froyo ROMs)
Which you go for depends on what you like in a ROM, and how stable you want. Froyo ones are slightly less perfected, but still perfectly usable for a daily phone (I use Froyd on mine every day for the past month or so, without issue)
The most stable would be a Sense 2.1 ROM, as that is as close to the HTC update as you get.

I'd like to have a plain WWE ROM in my HTC Hero.
I bought a Hero from my local store (Malaysia) and the Hero is not branded. However, the ROM is slightly modified and the most obvious and obnoxious difference is the omission of Market.
The (Android) Market is replaced by SlideME SAM in my local, unbranded HTC Hero.
Now, initially I'd like to get the Market without flashing my Hero to another ROM. I did google for hints how to achieve this, no avail. The closest probably market-enabler.
So now I decided to flash my Hero to a plain WWE ROM. I have downloaded
1. update-hero-generic-2.73.405.5-signed.zip
2. update-hero-radio-63.18.55.06EU_6.35.06.18-signed.zip
3. flashrec-20090815.apk
4. cm-recovery-1.4.img

Is update-hero-generic-2.73.405.5-signed itself a ROM, or just an update? Now I'm confused.
Am I able to use that update-hero-generic-2.73.405.5-signed and get myself a plain ROM, or I need to get the actual plain ROM somewhere then only I can install the update-hero-generic-2.73.405.5-signed?
In my understanding (it may not be comprehensive) you have the new rom just a different language version being malaysian hero.

I have my Android Market now, instead of that unwanted SAM.
I am required to manually key in all the details and settings for my HSDPA/3G/Internet settings which are easily obtainable from my telco
As for now, I have a fully functional Hero, with Market! Yeah.

Its one of those East Asian version of the phone. I am not sure if I wanna update my phone to Modaco or the WWE Rom. Any ideas??
Also, if you could point me in the direction of how to go about with either one of those, that would be great.

I think you are uptodate. You cant choose though.
To put Modaco Designer (I mean Rom) you have to perform certain ritual called "Root Way", as his roms are not RUU.
Thanks for ur reply Lucan. I dont know if I am up to date or not as yet, cuz for some reason I do not have market on my phone and I surely need to have that to get apps. I dont mind if I have to root my phone, just want to get a good custom rom that doesnt have much problems and has the access to market.
You mean no Market as apk? In that case I would first consult your network provider for their explnation if the said one also supplied your handset.
Or take a journey to Rootway.

I'm currently own a EU Razr. I upgraded it a couple of months ago to a Gummy ICS release. It works pretty good, sans Camcorder.
But now i would like to upgrade to the oficial Moto ICS (from what i read, it'll be releasing soon).
I did make a backup using Clockwork of my stock Motorola.
Do i need to downgrade to be able to upgrade? Should I?
Can i use my nandroid backup simply my applying it via Clockwork Recovery?

What's the issue with the current rom you have? Do you want to stick to Sense? I would suggest updating the firmware if you go to a more current rom. Check out the Dev sections for current roms to pick from.

Issue with my current ROM is it's a little unstable, has bad bluetooth and it crashes once every other day at random times. And would like to try a ROM with Jelly Bean OS.
What do I need to do to get my current set up to S-OFF, do I have do a complete factory reset and go back to the everything original (is that even possible after I unlocked the bootloader)? Or can I just flash the stock recovery (is that what stock RUU means?)?
And then will JuopunutBear S-OFF work?

You don't need to be s-off to install roms, there's just some extra steps in flashing the kernel.
Also I see you have duplicate posts with the same question, I'd close one if you can...
