It has the rom outside not inside Rom contains all its stock rom .
Rom contains full firmware .

can i have a little bit further explain? sorry i am too stupid for this =( mine is under XWKF1, there are 2 files to be downloaded..so which file should i put in odin? what is OLB and SME? rom outside-is it mean downloading that 2 files can help me restore back the stock rom? thanks first

Yes by flashing a stock firmware or kernel and resetting the custom rom counter to zero .

phone needs to be rooted before you flash a custom rom.
have a read through the developer section and all the answers for your other questions will be answered.
first steps first though - read chainfires root and clockwork recovery thread first to see what tools you need and follow the guide to the letter - no exceptions!

Typically you will need to root your phone before you install a custom rom, and yes you can easily unroot. There are several guides in the development section to help you. Make sure you read thoroughly and understand what you're doing.

How can I install the stock ICS update on the S2 without rooting? I know it is available as an OTA but I don't get it here in Malta. I tried to pass the phone over a proxy but it did not work.

Flashing via Odin does not require root.
Go to google and type Galaxy S2 stock roms. You will find a thread in xda or androidforums both are fine.You download them, in the both threads you will find detail instructions on how to flash it.
When you download a rom make sure it is the latest version [ for gb 3.7 I think ] and it should have a stock kernel.
If you want to stick to the stock kernel but you want to be rooted you flash CF root for your rom.
But flashing a custom rom makes absolutely no-sense whatsoever.
If you cant find a stable rom you can try GadgetCheck's Revolution rom.
It is really stable with no bugs, and the DarkKnight kernel is their project which is considered as the best GB kernel by me.
