phone needs to be rooted before you flash a custom rom.
have a read through the developer section and all the answers for your other questions will be answered.
first steps first though - read chainfires root and clockwork recovery thread first to see what tools you need and follow the guide to the letter - no exceptions!

Typically you will need to root your phone before you install a custom rom, and yes you can easily unroot. There are several guides in the development section to help you. Make sure you read thoroughly and understand what you're doing.

WARNING: I am a complete newbie and know nothing about 'flashing' or 'rooting'.
From a previous post, I learned that I should download "GT-I9100_XEU_I9100XWKJ1_I9100XEUKH2_I9100XXKI3.exe" to change my firmware from Spainish to something Canadian. I have it downloaded now.
I also read that I should have Kies installed, due to the drivers that it contains, but not 'running' in any way. I installed Kies but it will not connect to my phone - maybe because of my spanish firmware? Does this matter or is just having its drivers installed the important thing?
Is there a tutorial about how I should proceed? Do I need to 'root' my phone first? Do I need additional software?
Sorry for my confusion but I am really unsure as to how to proceed?

How do I find the correct firmware for NA?
there is no correct firmware for NA, any stock firmware will work on your phone as one of the stock languages is us english.
Flash KK2/KK5.

With a jig. Do a search on eBay for "Samsung Galaxy S2 jig". Costs ~$3.

If the jig doesnt work its because you need to flash the old bootloader.Newer firmwares have the non-wipe bootloader (2.3.5 and above I think) so flash this in PDA without selecting anything else.Just hit start.But only if you need it.

One restore your original Nandroid backup.
Two flash your original saved GB firmware.
Three flash your original firmware from the stock rom threads .
Or a bit of a read would find Stock UK ICS roms in the general thread .

You cant use it with KIES. You will need to use odin to flash it. Use the step by step guide with screen shots in the first post of this thread to find out how to flash it using odin:

How can I install the stock ICS update on the S2 without rooting? I know it is available as an OTA but I don't get it here in Malta. I tried to pass the phone over a proxy but it did not work.

Flashing via Odin does not require root.
Go to google and type Galaxy S2 stock roms. You will find a thread in xda or androidforums both are fine.You download them, in the both threads you will find detail instructions on how to flash it.
When you download a rom make sure it is the latest version [ for gb 3.7 I think ] and it should have a stock kernel.
If you want to stick to the stock kernel but you want to be rooted you flash CF root for your rom.
But flashing a custom rom makes absolutely no-sense whatsoever.
If you cant find a stable rom you can try GadgetCheck's Revolution rom.
It is really stable with no bugs, and the DarkKnight kernel is their project which is considered as the best GB kernel by me.

Can I simply flash another STOCK rom so that I have a revision number that is common, e.g. XXALF2
Will that root site you linked work for any revision, including the one I have above??
