I see in the root tutorial there are some exe files needed to run (I don't dual boot), is there any way to root on a mac yet?
You could try a virtual machine.

There is no restore function for the MAC. You will have to use a virtual PC on a MAC to do this.
There was something called openRUU a while back for mac users,... Not sure what it does though....

Is there a mac tutorial for s-off? I really want to move up to ICS, but kinda wanna have S-off before I do.
Since the tool required for achieving S-Off is Windows only, your only option is to either install windows in Bootcamp or possibly a virtual machine, or use a Windows PC.
Am a Linux (Ubuntu) user that knows my way around adb and fastboot.
I have only seen instructions how to root SGS3 by using Odin. Odin seems to be a Windows program. How do I root with Linux?

On trying Doomlord's method, it says to execute runme.bat . Where do I do this? Do I copy it onto the phone and then do it, or is it to be done on my PC?
And other requirements say install adb drivers..I use Ubuntu, so are these drivers required there?
Runme.bat is a windows batch file so you must use a windows pc
