No, it will not delete your backup. It only wipe /data partition. It will not affect your storage.

This!
/sdcard is in /data/media.
Stock recovery wipes /data/*
Custom recoveries exclude it

I was at the idea that stock recovery would completely wipe all of the internal sdcard

Dude, next time, be sure to have a ROM stored in your internal memory...
So to solve your problem, boot into download mode, connect to PC and flash stock ROM via Odin. Then, put a ROM in your tab just in case.

Yes if you have an external than put a nandroid on that and format the data on your internal in twrp.

I noticed on the latest version of twrp there's no option to format internal storage. Should I flash and olver version of twrp?

Yup just make sure you make a backup in twrp of what you're on now (called a nandroid) just in case the flash messes up somehow. And of course, before you format the internal sd, make sure your nandroid and the rom you want to flash are on your external sd.

If it is in philz recovery I believe in the settings. Either advanced or the philz settings you will see an option to change the location. Tell me if you find it. CMW... well no one really uses it as much but the change in file structure shouldn't change.
