Hi guys well I have a One here in Mexico and don't know much so here it goes. 1. If I unlock the bootloader can I flash any official software? 2. How will I update it later when 4.4. Comes out? Do i really have to do a s_off or just the unlocked bootloader will do? Thanks

I'm not really into this, but you have to wipe your cid partition to isntall other country roms, a normal update cannot cancel it
then, if I want to switch between ics roms of devices LATAM, EUROPE AND ASIA should wipe CID partition but to switch roms ics of the same region just patching the boot.img and flashing the system_signed would serve me ...

Don't be hasty, if you wipe the cid partition without a proper backup you can't restore it anymore and to fix it you need the change the motherboard. Unless you have some particular need i don't suggest you to flash other countries rom

If you are in 2.3.4 you need unlock the boot loader and after that you can install a ROM, if you have 2.3.5 you can't unlock and can't flash ROMs higher than 2.3.5

I am using Sony Xperia m (C1905) and it is already rooted. However I cannot unlock the bootloader of my device since it is not allowed by the device. When I checked the service info it says "Bootloader unlock allowed : no". So I cannot bypass this. I want to install a custom ROM but because of this it seems impossible.
You have a carrier branded Xperia, right?
Then ONLY Sony can do it and trust me, they won't

Then I won't be able to go any further, will I? I have to stuck in JB 4.3 until I sell this.
You got it. You are stucked In TVE kernel, which needs to be digitally signed by Sony.
Since most custom ROMs need it's own kernel, you need to remain In stock one, sorry
