Which roms (or rom families, really) are best for which purposes? I know some are designed to be fast and lightweight, while others go for the richest user experience, or other specialized purpose/situation.
My question is how can I find out the aim of the various roms?
The rom threads focus mostly on features provided and what rom family (if any) they based it on. Since I have no idea the aim of the original rom family (aokp, cm, miui, etc.) it's hard to decide which one is right for me.

Stock ROMs, which most of the customs ROMs out there are based on, are probably the most stable but the performance won't be as good.
CM7 and CM9 are slim and super fast, while MIUI, which is Cyanogen-based, has a bit more eye candy at the cost of performance. AOKP is very similar to CM9, except as far as I know the team has added many tweaks and features to make the experience more pleasant. Both are good choices if you're looking for ICS.

and I'm running the USA 5.0, fgcu. It was either this or an ipad, and avoiding itunes was worth the extra $20 (ipods were on sale that week).
If you are looking to install a rom, I recommend what I have listed down below. The dev of the rom is currently updating it to 2.3.6 and I can't wait for it. It will deffinitely fix the wifi drop bug and a slightly better Gingerbread version. You do need to install a custom rom though and the one below is also a good one too.

This was my rom of choice back when I was running GB. In my opinion it is the most stable rom available for the Player 5.0. This rom is pretty fast and light as it is based on a stock GB rom.
I would also recommend this rom as it is also very stable.
For general use I would say use GB as everything works, but you can also get ICS roms if you want but all of the ICS roms in the development section have pretty major issues e.g. the camera does not work. Take a look in the development section and read the user comments/reviews/bug reports

Cm 12.1 (imho)
CM 12/12.1 isn't the faster nor the smoothest and in terms of stability, it's not the best. but undoubtedly it's the prettiest version of android and many people love it including myself. CM11 is definitely the fastest of them all, but there are certain CM12.1 ROMs which are fast and smooth as hell but not as CM11
I think CM11 is *really* ugly and doesn't have as many features as CM 12.1 so I'd suggest you use any CM12.1 ROM of your choice and wait for an stable release of CM 13 since it has better ram management and more features than CM 12.1

I am currently running the AOSP version of Nougat on my Z3 (wifi only), but I have noticed that the CM version has just been released. Given the amount of development time are they both likely to carry on being developed? What is the benefit of moving to the CM version over the AOSP version or am I best sticking with the current ROM? I haven't had any real stability issues although when Lux lite kicks in sometimes the tablet will reboot!
Any advice from anyone who has tried them both?

Sorry for the late reply, just saw this thread today. As for the AOSP and the CM builds on here. The are both built by me, and as I lost my build machine for the AOSP version, it will most likely not be updated any further (not decided yet). As CM uses the same kernel and driver sources stability should be the same on both. Also I implemented LiveDisplay for CM in the next release and lowered the minimum allowed brightness, so you no longer will need Lux Lite.

but can you explain what's meant by CAF?
CAF stands for the Code Aurora Forum. It's the place where Qualcomm releases source code for their phone processors. It's directly supported by Qualcomm and it's generally a more optimized branch for Snapdragon phones.
Now, there are two mainlines for Qualcomm chipsets. We have CAF, and we have AOSP.
CAF is what Qualcomm provides to all hardware vendors, as references and documentation on the chipset. Because of this, almost all non-Nexus devices are running HALs, kernels, etc from the CAF line.
AOSP is direct from Google. Google will take a fork from the CAF like, and add or retract features that they deem necessary, and then produce that for Nexus phones.
So, what this means is CAF ROMs will likely perform marginally better, but they are lacking features added by Google's AOSP line.

CAF based.
not sure about the bugs. Last build is 24/06.
LineageOS is also AOSP + CAF based.
Paranoid Android is smoothest for me.

LOS merges CAF a lot slower than CAF dedicated ROMs (like HalogenOS)
LOS adds a lot more foreign code and hacks
If you want Pure CAF, Pure CAF speed, then a Non LOS CAF Rom is the way to go.

But I thought Lineage was the continuation of CM ROMs,an independent entity from AOSP Or CAF.

Wow, how about Paranoid Android and Slim ROM?
Which is better? I haven't tried Paranoid Android, but I guess Slim ROM is worth a try. I've been using Slim ROM for a month now. But if Paranoid Android gives more buttery smooth experience, with stability and performance, guess I will try it?
I'm running paranoid android and halogen OS side by side with velvet kernel (governor - blu_active, IO - maple) and both of them are running mighty smooth. Animations are off except for transition set at .75x-1x.
Though I recommended paranoid android earlier, in this setup halogen seems to be ahead. It seems more to do with the kernel settings than anything else.
Edit: battery consumption seems a tad faster in PA.

I find that the AOSP rom are mo buggy for me.
I like the future for lineage to change color profile.
I miss this in all other rom.
Halogen rom was my first rom that i try.
Its extremly fast but lack of a loot of futures.
So far i try ACIP - little laggy
AOSP Extended - buggy for me (keyboard, viber bug).
Legend - normal performance good battery life.
Halogen - really fast and stable rom no futures.
And now o dont know what to doo.
Im really like the lineage color temp profile.
I like the Android Paranoid but no colof profile.
Dont know what to do.

Depend on your requirements. Some offers customisation, some battery, some performance. So it's all individual preferences what they have and also comparison is somewhat difficult as it will differ person to person.
You could try AOKP, RR or pure AOSP. Or LOS as they gets updated very frequently.
